dough

  • 300 grams almonds
  • 15 grams Desiccated Coconut
  • 40 grams Linseeds
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons baking soda or bi carb soda
  • 5 eggs
  • 50 grams coconut oil or (EVOO)
  • 35 grams honey
  • 15 grams apple cider vinegar

Recipe's preparation

  1. Set oven 180 degrees and line a small loaf tin approx 10x20cm with baking paper.

    Mill Almonds and desiccated coconut in TM bowl 30 sec speed 10

  2. Add linseeds, salt and bi carb, mix 5 sec speed 5

  3. Add eggs, coconut oil, honey and cider vinegar mix 15 secs speed 3

  4. Pour into a lined small loaf tin approx 10x20cm and bake for 45 mins at  180 degrees (or until skewer comes out clean)

Tip

The original recipe calls for coconut flour, instead I mill desiccated coconut to a flour consistency with the almonds. You can make coconut flour by milling dry or toasted desiccated coconut  for 20-30 seconds speed 9. You can use fresh coconut if you dehydrate or dry it out in oven first.

    I used 240g Almond flour and replaced the linseed with chia seeds.

    I think everyone eating the paleo food starts to crave bread. This is a very good substitute. Of course after a life time of wheat bread and yeast it is very different. Sort a mix of bread and cake. Was moist, held together well and cut superbly in a very 'bread' like way.

    I thank you for giving us this receipe. Mind was nowhere near the colour of your photo it was pale lemon. But I have free range hens and turkeys. Used 2 turkey eggs and three hens.

    Was very unruly and had raspberries on half a slice and butter on the other half. Really satisfied my craving for cake and bread in one go.

    Great bread recipe. Very moist and nice with butter.

    i have cooked this twice now. The second time, I tweaked it a bit, added two ripe bananas and one less egg, also reduced the honey in half.

    Yep! This is a good bread recipe. The only thing I did to really bind it better (a little hint from the lovely Pete Evans) is beat the eggs till fluffy, or give the thermo a wiz so the bread mix looks creamy before pouring out.

    This bread couldn't have been easier especially as I already had all of te ingredients milled. So it was literally mix and throw in the Airfryer.

    Absolutely beautiful toasted for brekky today with avocado on top. This will be made regularily in my house.

    I put the mixture in a Glad bake lined Pyrex loaf, covered with extra piece of Glad bake & cooked in the Varoma- 35 minutes, Varoma temperature and speed 2

    Very simple and yummy. My husband even liked it. I used coconut flour only cos I had it. Thanks so much for posting  tmrc_emoticons.)
