Ingredients
Anzac Biscuits
- 50 g dates
- 125 g coconut oil
- 35 g hot water
- 1 tsp Bi Carb Soda
- 100 g Quinoa flakes
- 90 g almond meal
- 1 tsp Guar Gum
- 50 g Desiccated Coconut
- 70 g Coconut sugar

1. Preheat oven to 160C
2. Place dates in Thermomix bowl and chop for 15 seconds / speed 7
3. Add coconut oil and melt for 1 minute / 60C / speed 2
4. Add hot water and bi carb soda and mix for 15 seconds / speed 2
5. Add quinoa, almond meal, guar gum, desiccated coconut and coconut sugar and mix for 30 seconds / "Counter-clockwise operation" speed 2
6. Roll into 2.5 - 3 cm balls and place on lined baking tray. Press into 7 - 8 cm diameter biscuits, approx 5 - 8mm thick
7. Bake in in oven for 10 - 12 mins until golden brown
8. Allow to cool on tray for 5 minutes before moving to wire rack to cool completely.

I had no quinoa flakes so used oats. Used gluten free flour instead of almond meal. I had no guar gum and didnt replace it with anything. Had no dates so used prunes and saltanas and had no coconut sugar so used white sugar. After all of the changes it still worked out great
These were pretty tasty! I think I found them just a little too oily for my liking. I used a TBSP to measure them out but didnt flatten them so they had a bit of a different texture to what I was expecting. That's no reflection on your recipe though... Next time I think I'll decrease the coconut oil & see how that goes

My family can't eat dates, any suggestions for a substitute?
Loved these...first bickies made in my new Thermie with my 6 year old. I replaced the Guar gum with ground chia seeds, worked fine. I made mine smaller and thicker so needed a little more cooking. Will flatten them out a bit more next time.

used 90g oil, instead of any gum- Macadamia Butter and instead of Quinoa- Oats. Coconut Sugar compleately left out, but added 70g Dates!

Delicious biscuits. Only added 100gms of oil...perfect nd I used xanthem gum. Because I like my biscuits all the same size, I used a melon baller and flattened the. Only took 6 miutes to cook and made 38 snack size. Yum!
These were lovely. I used chia seeds in place of the gum and only 90g oil as per the other comments, ( think I'd use even less next time) and shredded coconut, baked for 15 mins. The flavour is lovely and just like an anzac. Enjoyed by all and will definitely make again
Very yummy! My coeliac husband was very appreciative. I used xantham gum instead of guar gum, 60g caster sugar to replace coconut sugar and reduced the oil to around 90g. I also need to cook for 15minutes. Will definitely make again.
Turned out great! I subbed the gym for chia seeds, reduced the oil to 80ml
