Ingredients
Cake
- 170 g golden syrup
- 125 g Butter
- 300 g SR flour
- 110 g caster sugar
- 40 g Shredded coconut
- 2 eggs
- 250 g full cream milk
Icing
- 60 g Butter, softened
- 5 g honey
- 5 g vanilla extract
- 210 g raw sugar
- 20 g hot water
- Shredded coconut, extra to decorate

Preheat oven to 180 degrees.
Place butter & syrup in TM bowl, melt 4 minutes/70 degrees/speed 2. Check butter is melted & heat for another minute if required.
Add flour, sugar, coconut & eggs. Mix 10 seconds/speed 4.
Keep the mixture mixing on speed 4 & gradually pour the milk into the TM bowl, through the hole in the lid. Take about 1 minute to pur the milk in.
Scrape down the sides of the bowl & mix 10 seconds/speed 4.
Pour mixture into a greased & lined cake tin & bake for approximately 60 minutes, or until a skewer comes out clean.
Place raw sugar in TM bowl, mill for 20 seconds/speed 9. Set aside.
Place butter, honey & vanilla in TM bowl. Mix for 15 seconds/speed 5, until creamy.
Add sugar, mix for 10 seconds/speed 5. Scrape down the sides of the bowl & mix again 10 seconds/speed 5.
Ice the cake & sprinkle extra coconut.

This cake is also nice without the icing, however, the icing is delicious!
