Ingredients
Please enter ingredients in the following order;
Dough
- 300 g Self Raising Flour
- 90 g Butter, cut into chunks
- 150 g Milk
Filling
- 60 g Butter
- 40 g Soft brown sugar
- 1 tsp cinnamon
Icing
- 150 g white sugar
- 1 tbsp Boiling water
- cinnamon sugar, to sprinkle over icing
Apple mix
- 2 Cooking Apples ie. Granny smith, Peel, core and cut into quarters

Pre-heat oven to 210C (190C gas)
Prepare a baking tray with a sheet of baking paper.
Place flour and butter into mixing bowl and mix 5 sec/speed 5 until mixture resembles breadcrumbs.
With lid set to "Closed lid" locked position, knead 40 - 60 sec/"Dough mode" Interval Setting adding milk gradually through the MC hole until a soft dough is formed.
Turn out dough onto ThermoMat or baking paper and roll out dough into a rectangle approx. 25 x 40cm and 5mm thick.
Place all ingredients for filling into mixing bowl and mix 10 sec/speed 4 or until creamy mixture has formed. No Need to clean out bowl.
Apples - "Closed lid" Turbo about 4 times, leave some texture to the apples, expel as much liquid as you can. Drain over fine colander.
Spread brown sugar mixture evenly over dough rectangle.
Then evenly spread the apple mix over top
Roll up dough from the long side and using a sharp knife (use plastic if using a ThermoMat), cut rolled up dough into 3cm pieces.
Place dough pieces, cut side up, on prepared baking tray and cook in the oven for 20-25 min or until golden brown. Turning tray 1/2 way through cook, for even browning.
Remove from oven and allow to cool while you prepare icing.
Weigh sugar in mixing bowl and mill 20 sec/speed 9 into icing sugar.
Add boiling water and mix 5 sec/speed 3 or until all sugar is incorpated and a smooth texture is achieved.
Drizzle icing mix over scrolls and sprinkle with cinnamon sugar.

Tip
If you don't care about the colour of the icing you can use raw sugar, the icing will just be brown instead of white.

Very nice, but as others have said it was more like a scone texture not a light fluffy scroll like I was expecting.
Came out beautiful, very quick to make, will use again for sure.
Delicious, hubby gives the thumbs up to this recipe. It’s like a Beautiful scone with a yummy apple filling. I did not use the icing as I found them perfect for my taste. I used a muffin pan to bake mine.
Follow the recipe! I thought the grated Apple looked pretty dry in the thermie jug so just tipped it onto the dough/sugar - then when I rolled it all up, juice went everywhere! They are just out of the oven now and look and smell great!

The texture is more like an apple cinnamon scone. Bit dense but still delish. Mine did not rise as hoped either. Next time i will cut a bit thicker than 3cm.

this is one of my go to recipe for scrolls. I've also made them with pears. I've not made the icing, they are good without it.
