Recipe's preparation

    Frosting
  1. If using raw sugar or castor sugar, mill to icing sugar, 10 seconds speed 10. Set aside.

    Break chocolate into pieces and place in TM bowl. Chop 7 seconds speed 7.

    Melt for 5 minutes at 50C speed 2 or until all melted. You may need to scrape down the sides halfway through. If you don't have 2 bowls, set chocolate aside.

    Insert butterfly. Cream butter and sugar 20 seconds speed 4.

    Pour melted chocolate into bowl and mix for 10-20 seconds on speed 3-4. You may need to scrape down the sides halfway through. If using white chocolate and adding colouring, add colouring at this stage and mix 5-10 seconds on speed 4 to achieve even spread of colour.

    This icing is perfect for piping or spreading onto a cake with a spatula. The icing sets quite hard at cooler temperatures and can be used as an alternative to ganache when decorating cakes.

     

Tip

You could easily make a half batch if you are only decorating a dozen cupcakes.

    Lovely tasting, but even with using white sugar and still milling it for 10 seconds the icing was still grainy...

    I followed the directions exactly in my TM5 and the frosting came out quite liquid and grainy from the sugar. The butter was even at room temperature! I think if you did turbo instead of 10 for the sugar it'd work better.

    LOVE this recipe. This is my go to recipe for cakes and cupcakes as it sets so well for cakes that will be left out for a while. Sit it in the fridge once iced and then take out when to use and its just delicious. The flavours of the buttercream with mudcakes is just devine. Thank you for the recipe.

    Tasted fine and was easy and I didn't even use butterfly, just mixed for longer.
    hiw did you get yours so dark, I used Cadbury dark chocolate and nowhere near as dark as yours, was quite a light brown ... ?

    Absolutely delicious!! I used 200g of dark chocolate instead of 400g, still rich, easy to spread and work with and set perfectly

    Beautiful frosting. Made sure the butter was at room temperature and soft first. Very nice will make again.
