Ingredients
DOUGH
- 275 grams water
- 5 tsp Dry instant yeast
- 550 grams bakers flour
- 1 tsp salt
- 2 tsp milk powder
- 2 tsp bread improver, IMPORTANT
- 65 grams sugar
- 2 tsp cinnamon
- 45 grams Butter, (soft or room temp
CINNAMON MIX
- 70 grams Butter, (soft room temp)
- 40 grams raw sugar
- 3 tsp cinnamon
CARAMEL SAUCE
- 70 grams Butter
- 120 grams brown sugar
- 45 grams heavy cream, or pure cream
APPLES
- 2 or 3 apples, Peeled, cored and diced

Put 400ml water in bowl - lid on - add diced apples to varoma tray.
12mins - varoma - speed 2 - until apple is soft (not moosh)
Once done place on plate on paper towel and put in the fridge.

1. Add all 'DOUGH' ingredients to the bowl (in order)
Combine 40 seconds, speed 3.
2. At this stage it will still be crumbly, but as you knead the dough it will start to come together.
Knead 8 mins & 30 seconds.
3. Tip out dough onto an VERY LIGHTLY floured bench.
knead this by hand for a minute to incorporate some of the flour. Kneed into a ball.
4. Pop the dough into a container (no lid) to rest for 20-30 minutes or to double in size. (Cover with tea towel in microwave)
TIP - DOUGH HASNT RISEN? - READ TIP
VERY LIGHTLY oil bench!
Knock down dough for a few minutes (make sure no air bubbles). Roll into 1/2cm thick rectangle (about 30/35cm x 40/45cm).

1. Put a bowl on the thermo lid - weigh butter, sugar and cinnamon and then mix together.
Spread over dough. (All the way to the very edge)
Sprinkle apples everywhere over the top.
Roll into a log and cut into 10//11 scrolls. (try and roll tightly but not to tight)
2. Place scroll pieces cut side up on baking tray with baking paper side by side. Leave to prove for 20 min in a warm place.
PREHEAT OVEN 180C
3. Bake 18-22 min until golden and cooked through.

1. Melt the butter in bowl.
2 mins - 50c - speed 2
Once melted, add brown sugar and cream
3-4 mins - 100C - speed 2.5 - until sugar has dissolved and butter and sugar have combined to make caramel - check after 3 mins.
Remove and pour over cinnamon rolls before serving. Wait a few minutes and the caramel will thicken up a little. YUM!!
Caramel sauce will thicken up at room temperature or if cold. You'll have to warm it back up to pour over rolls. If you substituted thick cream for pure cream it will not thicken up when cold but still work just as good.

Baked rolls can be frozen up to 1 month (without sauce) and warmed up to enjoy at a later date.

IF YOU DOUGH HASNT RISEN
Fill a baking pan with boiling water, and set it on the lowest rack in your oven. Place the container of dough on the middle rack, and close the oven door and allow the dough to rise.
Alternately, you can boil a cup of water in the microwave, then place the container of dough in the microwave with the water, and close the door. (Don't microwave the dough!)
Turn on the oven, and place the dough on top of the stove, covered with a damp towel. The oven keeps the surface of the stove warm, and the damp towel provides the moisture.

Loved these. I only did 50 Gm sugar and I didn't do caramel sauce I did vanilla icing. Will make these again.

Wow, this is definitely a 'Sometimes Food', very sticky and sweet, but oh so very delicious. Probably something I wouldn't prepare too often due to how sweet and 'moreish' it is. But would be great when entertaining.
