Ingredients
Lamingtons
- 120 g sugar
- 4 eggs
- 1 tsp Vanilla Bean Paste
- 50 g unsalted butter, melted
- 120 g Self Raising Flour
Lamington Icing
- 25 g unsalted butter
- 160 g Milk
- 500 g icing sugar
- 50 g Dutch processed cocoa
- Shredded coconut to coat

Preheat oven to 190C.
Butter and line a 20cm square cake tin and set aside.
Place sugar into mixing bowl and mill 10 sec/speed 10.
Add eggs and insert Butterfly.
Whip eggs for 7 min/50C/speed 3.
Add butter and vanilla paste and stir through 5 sec/speed 4.
Remove Butterfly.
Add flour and with dial set to"Closed lid" 'Closed Lid Position' mix for 10 sec/"Dough mode" Interval speed. Finish mixing with spatula by hand if necessary.
Pour into prepared tin, spin to level and bake for 15 - 20 minutes or until golden and springy to touch. Cool for 5 minutes before turning out onto rack to cool completely.
Freeze for 30 minutes before cutting.
Place butter and milk into mixing bowl and cook 2 min/80 C/speed 2.
Add sugar and cocoa and blend for 20 - 25 sec/speed 4.
Trim sides of sponge and cut cake into 16 equal sized cubes.
Scatter coconut over a tray.
Pour icing into deep bowl.
Using tongs, put each piece of cake into icing and coat liberally. Place onto coconut, push coconut up onto sides and on top to finish.
Transfer to flat tray lined with baking paper.
Repeat until all are covered, refreshing cocnut if necessary.
Allow icing to set before serving.

I'm not sure what I did wrong, I halved the chocolate like everyone suggested and ran out at 12.
The ones I did get to make have had a big thumbs up, and they look delicious. Very easy to make as well.
I will freeze the cake a touch longer I think next time too, the middle ones slightly fell apart on the chocolate step.

Made these on the weekend - delicious. I halved the chocolate recipe as suggested, and it was the perfect amount. This was my second attempt at Lamingtons, first time was an epic fail (another recipe), so was stoked with this one.
This recipe was my first ever attempt at lamingtons and it is a winner!
i doubted myself on the first batch and overcooked the sponge - my fan-forced oven definitely only needs 20 mins with a 20cm square dish.
every subsequent batch has been awesome!
Thank you for a lovely recipe. I did small muffin size and then removed patty cases. I made them into jelly cakes with Raspberry Jelly (1 1/2 cups water only) and then the coconut. So light and fluffy. The recipe made a lovely dozen, and were all raved about.
Made these. Doubles the cake recipe. Cut them into bite size pieces. 1 1/2 x the icing and had extra coconut so the kids could ice/make a mess. Really easy and taste good 😍
Excellent. Thanks for advice everyone, I doubled cake bit and made mine smaller, still had enough icing for them.
I also divided coconut (about 200 g), into 3 bowls and dyed one batch red, the other green, then mixed them together for Christmas lamo's for the neighbours. A HUGE hit.

I made a giant lamington cake with this recipe for a friends 40th birthday.
Easy mixture to double, cake is delish, icing is just like a "proper" lamington.
