Recipe's preparation

    TM 31 Poached Egg
  1. 1. Place steamer basket and 1.8ltrs water into the thermomix bowl. Heat 8 min 70deg speed 3.

    2. Place eggs (I used 59gm xl eggs from the fridge) carefully into the steamer basket.

    3. Cook 11 minutes 70deg speed 3.

    4. Carefully crack the egg on the pointy end and slight peel back some shell. The egg will appear poached and should slide out the shell. Scoop out if any remaining egg white from the shell with a spoon. Yum!

  3. 1. Place steamer basket and 2ltrs water into the thermomix bowl. Heat 7 min 70deg speed 3.5.

    2. Place eggs (I used 59gm xl eggs from the fridge) carefully into the steamer basket.

    3. Cook 12.5 minutes 70deg speed 3.5.

    4. Carefully crack the egg on the pointy end and slight peel back some shell. The egg will appear poached and should slide out the shell. Scoop out if any remaining egg white from the shell with a spoon. Yum!

    This cooking method is known as Sous Vide (slow cooked). I've cut the egg in the photo to show the conistancy on the yolk. But the egg comes out the shell in its full form in tact.

Tip

I always use the XL eggs straight from the fridge and never fails and also up to four at a time. If you like your eggs more well done, a couple of things you can try to see if you prefer this type of consistency. I would suggest trial in this order to see what works best for you:



Take the egg out of the water for approx 2 minutes leave in its shell intact before cracking the egg. OR



Keep the egg in the water once the time is up for up to a minute before cracking the egg



Egg consistency can be quite a personal preference but you can experiment with the length of timing to get it how you like

    Sous vide is slow cooked. If you're slow cooking eggs, wouldn't you double the time and heighten the heat? This definitely leaves a really raw egg, if you put it back in after checking it makes a mess. Not a fan.

    Followed this perfectly. Unfortunately very runny egg whites ! I will try and follow your recomendations re: eggs at room temp and longer time!

    Great concept but way too runny for me. The whites were nearly raw. I will definitely experiment as the flavour was better than cooking in water. Thanks for the idea
