This makes a tasty moist chewy bar. Added handful choc chips. Used goji berries almonds and dates as had no dried fruit
Delicious! I cooked for 15 minutes as per the other comments and they are perfect.
I swapped the fruit for Choc Chips and baked these in my silicone bar moulds for 15 minutes as suggested in other comments at 190°c because I wanted a crunchy muesli bar.
They're nice, but still softer than I anticipated.
Baked for about 15minutes before refrigerating. Definitely no sugar required, sweet enough! Kids and I all love these, thanks for sharing!
I havent made these for ages, but decided today it was about time. I have saved the recipe but did a check anyway, and it has changed a bit. I include pistachios (as per original), never included the sugar (which is not there now) sub rice malt syrup for honey. I notice cinnamon is now included, pity I made them before I noticed and I should have thought of that myself, will also include a tsp of vanilla extract next time as well. Oh an original recipe was just 160g of dried fruit of choice, I generally get a mix from Coles pick and pack section, called Berry Mix I think.
I also cook it for about 15 mins at 160c for that extra crunch, and I do like the brownish top. Inside is still nice and chewy.
Most definitely cool totally before slicing. I keep in the freezer as they don't take long to defrost and (hopefully) stops me eating all at once
Best recipe I have seen for Muesli Bars, winner all round for taste, texture and versatility of ingredients
These are the best. I do not put the sugar in and instead add a handful of choc chips at the end.
Ive made a few different but similar muesli bars from the community recipes, and this one is by far the yummiest.
I did however change a few things, such as I used Golden flaxmeal instead of wheat germ, and i used 100g of Light Agave instead of honey, and 100g of coconut oil. I found this to be ample wet ingredients, and with my next batch I may reduce the Agave down to 80g and 90g of coconut oil as with all the minced dried fruit in it its quite sticky enough and will press and hold shape quite easily as it is. You just may need to slighty reduce the cooking time of the liquids if using less than the recipe states.
With the dried fruit I used approx 70g apricots, 20 saltana's and 10g of goji berries which gave a lovely splash of red colour here and there in the bars.
4 kids went off to school today with them in the lunches, be interesting to see if their lunch boxes come back empty. However I'd be very surprised if they do.
Thank you for this recipe.
I have made a couple of tweaks to the recipe, based on my own use and comments of others.
I've omitted the sugar from the ingredients list, and added some dates to lend some natural sweetness. I've also added a little cinnamon.
Sarah
Tasty but oh so sweet, doubled the recipe and added 80g sugar and 120 honey
