Ingredients

Base

  • 200 grams Plain Biscuits (Marie)
  • 100 grams Butter

Lemon Cheesecake

  • 375 grams Philadelphia Cheese (not easy spread) at room temperature
  • 100 grams castor sugar
  • 5 grams Vanilla Bean Paste
  • 1 lemon, zested (sml or 1/2 large)
  • 200 grams cream
  • 2 teaspoons gelatin
  • 2 tablespoon Boiling water

Raspberry Jelly

  • 1 package Raspberry Jelly Crystals (or Port Wine)
  • 380 grams (mls) water

Recipe's preparation

    Base
  1. Prepare a lamington tin by lining with non-stick baking paper, ensure it comes up the sides. Place biscuits into Thermomix and chop 8 sec/speed 8 and set aside. Clean and dry mixing bowl, add butter and cook 2min/90°C/speed 3. Add reserved biscuits to butter mix and min 10sec/speed 4. If need be scrape sides and mix for another few seconds. Press biscuit mixture into the tin using the back of a spoon, press and smooth untill an even layer is achieved and place into fridge to set. 

     

  2. Lemon Cheesecake
  3. Mix the gelatin with the boiling water and put aside to cool slightly. Place Philadelphia cheese, sugar, vanilla bean paste and lemon zest into thermomix bowl and mix 10 sec/speed 6. Scrape down sides and repeat. Add 100g of the cream and mix 5 sec/speed 6 then add remaining 100g of cream and mix 5 sec/speed 6 or until combined. Scrape down sides and without measuring cup, turn to speed 3.5, slowly add reserved gelatin mix until combined. Pour over base and spread out evenly. Refrigertae for several hours.

  4. Raspberry Jelly
  5. In a bowl combine jelly crystals and 200ml of boiling water, whisk until dissolved, then add 180mls of cold water. Place jelly mix aside to cool.

    When cool, pour gently over lemon cheesecake mix and refrigerate until set. Slice and serve. 

     

     

Tip

This slice is fantastic as it is not overly sweet. You could replace any biscuits for Marie but plain and not overly sweet is best in my opinion. Any flavour jelly could be used.

Wash knife in between slicing to ensure a clean cut. 

Not suitable for freezing, can be made a day ahead. 

I make this in the evening up to the jelly part, then do the jelly first thing in the morning. 

This can be made in the TM31 and TM5.
