Ingredients

Fruit

  • 4 green apples, cored, peeled & chopped
  • 4 stalk rhubarb cut into 2cm pieces
  • Juice of 1 lime
  • 1 tsp Vanilla bean paste or extract
  • 1/2 tsp cinnamon

Sorbet

  • 150 g sugar
  • 1 egg white
  • 700g-1kg ice

Recipe's preparation

  1. Describe the preparation steps of your recipe

  2. Place all Fruit Ingredients into TM bowl and cook 8mins/100deg/Counter-clockwise operation"Counter-clockwise operation" /sp 1

    Allow mixture to cool completely

    There is enough fruit for TWO BATCHES of Sorbet

  3. Sorbet
  4. Weigh in the sugar and mill 10sec/sp9

    Add half the fruit, the egg white and 700g ice and blend 30sec/sp10 using the spatula to assist blending. Check consistency of sorbet and if too soft add more ice through the hole in the lid, blending at speed 9 until desired consistency.

    Serve immediately

Tip

There is enough cooked fruit for two batches of sorbet

    I nearly didn't make this because rhubarb was not on special and pretty expensive...but bit the bullet and bought and cooked rhubarb (my first time), and I'm so glad I did! This is one of my favourite desserts now, and hands down my favourite sorbet!

    This is also REALLY nice if you freeze the cooked rhubarb/apple combo into two portions, then use as fruity dream.... heavenly I think i'd say tmrc_emoticons.) SO creamy and light.
