Ingredients

Bourguignon Recipe

  • 1 onion, (1 large onion/2 small onions)
  • 700 gram Rump Steak
  • 3 carrots, sliced
  • 350 grams button mushrooms, chopped in half
  • 2 tablespoon TM vegetable stock concentrate
  • 150 grams red wine
  • 1 can Tinned tomatoes
  • 2 bay leaves
  • 3 sprigs Thyme
  • 80 grams tomato paste
  • 100 gram water

Parmesan Dumplings

  • 40 gram Parmesan cheese
  • 2 tablespoon Continental Parsley
  • 300 gram Self Raising Flour
  • 20 gram butter (soft)
  • 170 gram Milk

Recipe's preparation

    Dumpling Mix
  1. Place parmesan cheese in bowl and grate; 7- 10 seconds speed 9.


    Add parsley and chop 3 seconds speed 7.


    Add self raising flour; butter and milk, and salt and pepper to taste and dough mode for 25-30 seconds until combined.


    Roll into balls appromiately 2 cm in diameter and place on varoma tray (approximately 2cm apart), and in varoma dish if tray is full.


    Set aside.


     

  2. Beef Bourguignon
  3. Add onion and garlic to clean TM bowl and chop 3 secs, speed 7. Scrape down side of bowl. 


    Add olive oil and cook varoma temp, 2mins, speed 1. Scrape down side of bowl.


    Add chopped beef and cook on varoma tempcounter-clockwise operation, speed 2, 3 mins.


    Add all remaining ingredients and cook on 100 degrees, counter-clockwise operation, speed 1 for 10 minutes. (you may need to place steaming basket on lid to prevent splattering).


    Add salt and pepper to taste; scrap down side of bowl.  If more liquid required, add to bowl at this point.


    Place the varoma tray and dish (with the dumplings) on top of the bowl and cook for 15 minutes, varoma, counter-clockwise operation speed 1.


    Check if dumplings are well cooked; if required repeart previous step by 5minutes! 


    Once finished, serve in a bowl with the beef bourguignon served over the dumplings!  Enjoy!

Tip

Once cooked, don't place the dumplings with the hot sauce as they will continue to expand.  Keep seperate until ready to serve.  If you have leftovers, keep the dumplings stored in a seperate container to the sauce!

    Flavour was good, but beef took so much longer to cook than recipe stated. I only used 500gm beef but found not enough liquid, not enough veg and too much meat. Wouldn't make again.

    delicious and hearty.the aroma of the wine while it was cooking was devine!I will try the recipe again, but cook the beef for longer to make if more tender

    Thank you for a fab recipe.  I used chuck steak (that's what I had) and cooked for 55 minutes (omitted dumplings). My 5 year old son and I loved it.

    Beef and sauce were nice. The instructions say to add garlic, and oil, but these are not mentioned in the ingredients list, so I took a guess with 1 clove of garlic, and enough oil to saute, and it seemed to work. Amount seemed ok in the TM5. Dumplings were ok, but a bit dense for us. Will try serving with mash next time.

    Had this last night. Thought the bourgignon was really tasty. I simmered it on a lower heat for an extra 15 mins just to get the veg and meat a bit softer. Dumplings were ok but I felt a bit lacking in flavour even though I put a bit more Parmesan in than the recipe required but with the sauce over them it didn't matter as it more than made up in flavour. Will definitely make this again!
