Ingredients

Salad dressing

  • 25 g ginger
  • 2 cloves garlic
  • 80 g soy sauce
  • 40 g rice wine vinegar
  • 5 g sesame oil
  • 10 g sugar
  • 45 g peanut paste

Salad

  • 2 chicken breasts, cubed
  • 180 g Ramen or soba noodles
  • 1 Whole red capsicum diced
  • 1 tablespoon chopped coriander
  • 2 handfuls baby spinach
  • 4 Spring onions sliced, Including white parts
  • 1/2 cup Salted peanuts, chopped
  • 1 teaspoon sesame seeds

Recipe's preparation

    Salad dressing
  1. 1. Place peled ginger and garlic into TM bowl and mix for 3seconds, speed 7. Scrape down bowl and mix for another 3 seconds or until all ginger and garlic is finely chopped.

    2. Add all other dressing ingredients and mix for 20 seconds speed 7. Reserve until salad is prepared
  2. Salad
  3. 1. Place diced chicken into varoma dish and tray. Add 1.5litres into TM bowl. Cook for 15-20 minutes, varoma speed 2.

    2. While chicken is cooking prepare other salad ingredients and place into large bowl.

    3. Once chicken is cooked place to the side to cool. Add noodles into the remaining hot water. Cook for 3 minutes, reverse soft speed, 100 degrees.

    4. Drain and rinse noodles. Add to other salad ingredients.

    5. Place cooked chicken breast into TM bowl and shred on reverse speed 4 for 4 seconds. Add to salad bowl

    6. Pour dressing over salad and serve.

    OMG Delicious - I definitely will be making this again. It has everything going for it. I was worried at 1st the dressing was too salty, but once combined with all the other ingredients it is definitely a winner & I will make it again and again. Thank you for a great recipe.

    I gathered the ingredients made enough for 4-6 serving, so I used half the salad ingredients and only put enough of the chicken, salad and noodles together to make enough for my partner and myself. So I've got enough for tomorrow evening as well now and it won't go all soggy. I used apple cider vinegar as I have read it's a good substitute for rice wine vinegar. I added 2 chillies, as other comments had said, when I diced the onion and garlic which made it so much better. I've now got to make another lot of dressing though for tomorrow night because my partner loved it so much all the sauce has just about gone 😂

    This was so good! I didn't have coriander or soba noodles, used bean thread noodles, worked great. Shredded lettuce with it too. Will be perfect for summer meals.

    It's in the health food section - it's just peanut butter with out the added sugar and salt.

    Can anyone tell me where you can buy peanut paste I couldnt find it at woolworths so just used peanut butter.

    Really nice recipe. A bit too much ginger for my kids but adults enjoyed it. still tasted great the next day too!

    This was delicious! Will definately be making again. I added whole peanuts to the sauce and blitzed them with the other ingredients as I didn't have any peanut paste. Amazing tasting!
