Eezy Peezy Crumpets (Scottish Style)

  • 120 grams self raising flour
  • ¼ teaspoon baking powder
  • 1 egg
  • 160 g Milk
  • 2-4 teaspoons caster sugar, depending on sweetness

Recipe's preparation

  1. Add ingredients and mix for 5 seconds on speed 3-4. Scrape down and repeat.

     

    Add a little butter to a pan and around egg rings and heat pan on low heat for 1 minute.  Add about 2 tablespoons of crumpet batter to each egg ring and cook over the low heat without turning for around 8 minutes. Crumpets are cooked when the bubbles stop rising to the surface. Repeat with any remaining mixture.

*I have reduced the amount of sugar recently due to feedback, and updated the title to clarify they are Scottish crumpets!

    Even though these aren't like the store bought crumpets and they are like piklets, the kids still loved them. Next time I will try it in the pie maker as others have suggested and see if I get a better result.

    OMG these are awesome. Didn’t want to muck around with yeast & too impatient for the proofing process! Wasn’t sure if we’d like Scottish style crumpets (never heard of them) but i’m so glad I tried your recipe. A fav for sure 👏🏻

    I love love LOVE these!!! I can fit x6 in my tm5. (Big family). I half the eggs though, so I only use 3 eggs for my big batch and and it’s not eggy like the 6 eggs. I also use water, instead of milk. It makes them lighter, and dairy free for our son’s intolerance. Made in the pie maker - perfect! Thanks for that hack!!

    These were quick and easy to make. I used silicon egg rings and so they popped out very easily. I also got 12 crumpets out of the mix.
    I used Orgran GF SR Flour (and Lactose Free Milk). They didn't bubble much but I realised afterwards that I had missed the step of "scrape and repeat" so assume my flour was not blended properly.
    I also used 2 tsp of sugar, and this was a perfect amount for us. (We are not a sweet tooth family.)
    We will make again.

    These were wonderful! I tried them out last night and we all gobbled them down right before dinner!  ha ha.  I burned the bottoms of them but I think that's because I let my pan get too hot before pouring the batter in.  Lesson learned for next time!  The burned bottoms cut right off though so no problem! tmrc_emoticons.)

    I have made these for Father's Day tomorrow as my hubby loves crumpets. They were easy to make. They look like a mix between a crumpet and piklet and smell more like a piklet. Im going to toast them in the morning and serve with butter and jam. I think they will be nice either way. Thanks for the recipe!

    We make these regularly and my kids love them! They are a great change from pancakes and an excellent alternative to store bought crumpets which have preservatives I prefer to avoid. If you leave the batter to rest a bit or add a litte extra baking powder they will have more 'holes/bubbles'. I grease my rings and pan very well with coconut oil and they slip out easily. we get about 6-8 crumpets and they are nice and filling. Spelt flour works well too. tmrc_emoticons.)

    Thanks for the feedback - I have clarified in the recipe title that these are Scottish-Style Crumpets, not the Golden Crumpet style you may be used to from the supermarket which have a different texture and different ingredients. I would love if someone is able to replicate the English Golden Grumpets!

    I agree that these are just pikelets cooked in an egg ring. They tasted quite good, but just as a pikelet would taste, only much messier to clean up (because it was hard to get the cooked mixture off the egg ring). Bit of a novelty for one batch, but I won't cook again.

    These were so quick to make. I've made the yeast ones before and it took forever to get them ready for breakfast. We made these on the BBQ and whilst a little brown on the base, we turned them to brown the top and then served them with smoked salmon, capers, onion and cream cheese. A very yummy breakfast for our family. Thanks for this quick/easy recipe.

May I recommend to add one more thing in your recipe: to put them under the hot grill of the oven (with the 'top side' facing up) once they are cooked to toast them - this worked fantastic for us!  Yum! Thanks for posting! (I watched 'masterchef masterclass' the other day and Gary did crumpets too...only that his took wayyyy longer and were wayyy more complicated!)
