frypan, large egg rings (silicone great as usually slightly larger and taller)

Ingredients

1 tablespoon raw sugar
120 g self raising flour
¼ teaspoon baking powder
1 egg
160 g milk


Preparation

1.

Weigh in raw sugar and mill for 3 seconds on speed 9 to make caster sugar.

Add remaining ingredients and mix for 5 seconds on speed 3-4. Check you have a smooth consistency- if not, scrape down and repeat.

 

Add a little butter to a pan and around egg rings and heat pan on low heat for 1 minute.  Add about 2 tablespoons of crumpet batter to each egg ring and cook over the low heat without turning for around 8 minutes. Crumpets are cooked when the bubbles stop rising to the surface. Repeat with any remaining mixture.

would anyone have any ideas

would anyone have any ideas if I could make these dairy free? I am told crumpets from the store are dairy free, and Im a dairy free girl. LOVE crumpets. would love to make myself. might try making with almond milk...any other suggestions? Im very new to all of this (eg thermie & dairy free! lol) Smile

These were so quick to make.

These were so quick to make. I've made the yeast ones before and it took forever to get them ready for breakfast. We made these on the BBQ and whilst a little brown on the base, we turned them to brown the top and then served them with smoked salmon, capers, onion and cream cheese. A very yummy breakfast for our family. Thanks for this quick/easy recipe.

our family absolutely loved them this morning! May I recommend to add one more thing in your recipe: to put them under the hot grill of the oven (with the 'top side' facing up) once they are cooked to toast them - this worked fantastic for us!  Yum! Thanks for posting! (I watched 'masterchef masterclass' the other day and Gary did crumpets too...only that his took wayyyy longer and were wayyy more complicated!)

z These look great Leanne :)  i have been meaning to try crumpets for ages. going to surprise my daughters with them this morning . will let you know how they go down:D anything they dont have to cook themselves will go down well, i.m sure. they have been fending for themselves a lot lately with me being sooo busy doing demos and getting my team up and running Smile (dont worry they are 19,21 and 24 Big smile ) how is it all going for you? hope its all good.
