Ingredients

  • 240 gflour (plain, wholemeal, buckwheat or a combo)
  • 160 g brown sugar, (or rapadura)
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • ½ tsp salt
  • 2 large carrots
  • 50 g sultanas
  • 2 handfuls of nuts of your choice
  • 1-2 apples
  • 3 eggs
  • 80 g grape, seed/rice bran oil
  • ½ tsp vanilla essence
  • 30 g Shredded coconut

Recipe's preparation

  1.  

    Put in buckwheat (or any grain combo you would like to use) and mill for a minute. Set aside.

    Put in carrots, apples and nuts and then chop for 3 seconds on speed 8.

    Add rest of the ingredients and put on closed lid interval speed for 20seconds or until just mixed. (you may need to use the spatula to help incorporate everything). If you prefer smooth muffins mix for a few more seconds.

     

    Put in muffin trays and cook for 20 min at 180 degrees.

    This recipe is great and so flexible. I've substituted pear and another time banana for one of the apples. O also add in a few pumpkin & sunflower seeds.
    They keep well and most importantly the kids love them including a very fussy 2 year old. This will become a staple in our home - thank you. Smile

    Very Nice! I used gf plain flour, a pear instead of apple as had none & also added 1 small banana. Used Rapadura sugar. Turned out yum! 1 & 4 yo loved them!

    These are great, easy to substitute with what you have on hand and taste great!
    This time I only had one carrot left, a couple of handfuls of sunflower seekds, pepitas & cashews, used a ripe banana & used 50g of coconut sugar. Delicious!

    I was sceptical, because healthy usually means it doesn't taste great, but they were absolutely amazing. I have to eat autoimmune paleo, so changed sugar to coconut sugar, I used coconut and tapioca flour mix and I hate raisins, so I used dates and honestly they were the best muffins I've ever had.

    i did mine with agave syrup and coconut sugar syrup and I think I'll try brown sugar next time as it wasn't that sweet and a bit too moist. Loved the flavour so I'll try again soon.

    My kids love these.  Used GF pain flour & millet flakes.  Reduced sugar to 100G & used coconut sugar.
