Ingredients
Dough
- 180 g buttermilk
- 150 g honey
- 100 g Butter
- 130 g water
- 2 eggs
- 1 tbsp dry yeast, heaped
- 1 tsp salt
- 800 g bakers flour
- 1 handful currants or choc chips, to decorate
Glaze
- 50 g honey
- 30 g Butter

1. Add milk, honey, butter and water to "Closed lid" and heat - 4 minutes/50 deg/speed 1
2. Add eggs, yeast and salt and mix - 5 seconds/speed 4
3. Add flour and mix - 10 seconds/speed 5, then knead - "Dough mode" 5 min
4. Allow dough to rest in "Closed lid" for 15 minutes, then knead again - "Dough mode" 5 min. Rest once more in "Closed lid" for 15 minutes
5. Turn dough out onto Thermomat and gently divide into 16 equal pieces. Be careful not to overwork the dough when shaping
6. Roll each piece of dough into a long rope, length of Thermomat (30cm)
7. Cut each piece at 20cm and coil (like a snail shell)- this length makes the body. Place on baking tray lined with baking paper
8. Cut the remaining 10cm in half and coil - one half makes the head. Attach to body by pushing pieces together
9. Cut the remaining 5 cm into 3 pieces. One piece makes the tail (roll into ball and attach to side of body), and 2 pieces make ears (shape into ears and attach to head)
10. Use 2 currants or choc chips for eyes. Allow to rest again for 5-10 min before baking and preheat oven to 170 deg
11. Place in oven for 15 min or until golden brown and cooked through
** Glaze - With a few minutes to go, prepare glaze. Add honey and butter to "Closed lid" and heat - 2 min/50deg/speed 2
12. Use a kitchen brush to paint bunnies with glaze and serve immediately. Store leftovers in an airtight container in a cool place
Tip
This recipe makes a delicious sweet, heavy bread, and is best served and eaten fresh.
The rest periods allow for a lighter dough. Reducing the resting times will result in a denser bread.
The dough will be slightly sticky. Use a little light olive oil on your hands to help shape your bunnies.
Currants have a tendancy of falling off unless you really dig them in.
If you are able to make your bunnies look more like bunnies (!!), upload a picture and upstage me, PLEASE!!
If you don't have time to make bunnies, just shape into scrolls.
For a little twist - roll dough into a flat round piece and add some diced apples and a sprinkle of cinnamon. Then roll into a log and use some dental floss to cut into scrolls. Bake until golden brown.
The glaze can be a little sticky so if you're feeding kids and DON'T want sticky faces and fingers, omit the glaze. It still tastes delicious without!

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
