Ingredients

Curry

  • 2 Hot small red chillis
  • 2 clove garlic
  • small piece ginger, approx 2cm
  • 2 Red onions
  • 40 g vegetable oil
  • 1 tsp Cumin Powder
  • 1/2 tsp tumeric powder
  • 5 clove whole cloves
  • 5 Whole Peppercorns
  • 5 Green Cardamom Pod's, bruised with flat side of knife
  • 1 stick cinnamon
  • 2 fresh tomatoes, roughly diced
  • 600 g chicken breast fillets, skinless, cut into 3cm cubes
  • 50 g water
  • 230 g coconut milk
  • juice of 2 limes
  • coriander leaves, Garnish
  • 1 tsp TM vegetable stock concentrate

Recipe's preparation

  1. Chop  Garlic, Ginger and Chilli on Sp 7 for 5 secs.

    Add Onions and Chop Sp 4 for 5 secs.

    Then add 20ml Oil and Sauté for 3 mins 100deg. 

    Add dry ground spices and 20 ml oil and cook Varoma Temp, 2 mins Reverse Speed 1.  

    Place in Butterfly.

    Add Chicken, Tomatoes, Water and Stock Concentrate and whole spices. Cook for 5 mins. 100 degrees Soft Speed. 

    Add Coconut milk and lime juice. Cook 20 mins 90 degrees Speed Soft. Place Simmer Basket on top to prevent splashing.

    Place in Thermoserver and Garnish with Fresh Coriander.

    Serve with Mandazi, Chapattis or Rice.

     

Tip

Add 1 potato at the chicken stage if you like a more substantial curry. Make sure the potato cubes are kept small for even cooking.

    Sauce was fragrant & flavoursome but too watery for my liking; unfortunately I forgot to check previous comments before making. I will try again but sub coconut cream instead and not add water. Also, the lime was a bit too much so I'll try juice of one lime only next time.

    Mine turned out quite watery, next time I think I will omit the water and maybe add some greens. Flavours were nice although I would have liked a bit stronger. Very easy to make though so quick.

    This was a really delicious curry. I might reduce the coconut milk by 50g or so as I prefer less curry sauce. Will make again. Thank you!

    Thank you Adrianne for this receipe, I made it for dinner tonight and thoroughly enjoyed it, I added some verges (potato, peas, carrot and corn), mainly just to get some veggies. Really nice flavours. Love

    This was the first curry Ive made in my Thermomix and it was delicious!!! Flavour was great, not too hot and not too mild, although I left out the green cardamom pods.

    We cooked this last night and it was really delicious. Really good for lunch today as well. The lime juice made it quite sour which was really yummy. I used an extra chilli pus did not de-seed. could have done with even more. Also more corriander would have worked. Thanks. Really good.
