- 250 grams Black Rice
- 230 grams coconut milk
- 235 grams water
- 2 fresh pandan leaf
- 90 grams rapadura, brown or palm sugar
- 80 grams coconut milk for serving
- 1 banana

Soak black rice in cold water overnight.
Insert buuterfly then place rice, coconut milk, water, sugar and pandan leaf in TM. Cook for 100ºC / 45min / speed 1 / reverse.
When rice is cooked, remove pandan leaf and pour into 4 remenkins.
Serve with sliced banana and dizzle with coconuit milk
Tip
Rice is cooked when liquid to absorbed. May take a little longer to cook

Where can you buy pandan leaves from?
could you please clarify....when soaking the rice in water ...how much water, presuming is extra to the water that you add after soaking with other ingredients?

I have just made this again for the fifth time. My family love it. Also goes beautifully with the sugar free mango and coconut icecream!
