Ingredients

1200 gm ripe tomatoes fresh with skin on and halved

  • 1 Large green apple, Skin on, quartered and core removed
  • 1 large onion, Peeled and halved
  • 140 grams white vinegar
  • 1/2 heaped teaspoon mustard powder (dry mustard)
  • 1/2 level teaspoon ground cloves
  • 1/2 level teaspoon allspice
  • 1 pinch cayene pepper
  • 20 grams Himalayan salt
  • 200 raw sugar

Recipe's preparation

    Sterilize 2 bottles - can be done by putting clean bottles in 100 degree oven.
  1. Place apple, onion and weigh tomatoes into the bowl. Chop Speed 7/15 seconds

    Add vinegar, mustard powder, cloves, Allspice, cayene pepper and salt. Cook 15 minutes /Varoma temperature/Speed 3/ place basket on top

    Then cook another 20 minutes /100 degrees/Speed 3/ place basket on top

    Add sugar, Puree 1 minute / slowly going from Speed 1 to Speed 9/ MC

    Cook another 10 minutes /Varoma temperature/ Speed 2/place basket on top 

    Pour into sterilized bottles and seal while hot. Place bottles upside down until cool

    Can store 12 months or more in pantry. When open store in refrigerator

If you prefer to make a large batch of sauce on the stove top and do preparation in TM, the following is ingredients required:

3 kg tomatoes, 2 large onions, 5 green apples, 11/3 cups white vinegar, 2 tablespoons of salt, 1 heaped teaspoon of mustard powder, 1 teaspoon of cloves, 1 teaspoon of allspice, 1/2 teaspoon of cayene pepper, 680 gm sugar

Puree onion, apple, tomatoes. cook all ingredients except sugar which I add at the end. Takes 31/2 hours approx cooking on low. When sugar is added and heated and disolved. Transfer some at a time into TM bowl and puree 1min and then heat to 100 degrees and pour into bottles.

Cuts preparation time and normal cooking time in half

    So delicious! I make a batch of this a couple of times a year to keep us going. The kids even like it.
    We use it on lots of things and I add it to things while cooking too.
    It is quite thin, I usually add some cornflour in a paste towards the end.
    I think it becomes slightly thicker in the fridge too?
    It's yum anyway!

    Very tasty, mine was a bit thin, what can I do to make it thicker next time? Increase cooking time to reduce liquid?

    I had to use a glut of tomatoes - I added Mexican chilli powder & Korean - as I had no cayenne powder.  I also had to use bottled seeded mustard as I had run out of powdered mustard.  Love it - just a subtle amount of heat afterwards - great flavours! Thank you for the recipe!

    Onto my 6th batch. Best ever. My tomato sauce loving mother no longer enjoys her favourite supermarket brand and I'm not a huge fan of tomato sauce but love this one. Love how it tastes, love how long it lasts once opened and also love that mostly I have all the ingredients on hand - usually on need to buy the tomatoes.

    Am just making my second batch as I write this.  It tastes just like real sauce!  I did add a red pepper though as had seen one added in a different recipe and had excess.  It was a little runny and added an extra apple this time but a previous comment said it thickened on cooling.  Really love the taste and not too sweet.  Will definitetly be a keeper.
