Dip
- 1 red chilli, you can reduce to half or deseed chilli if preferred
- 30 grams Parmesan cheese, cubed
- 1 clove garlic clove
- handful of fresh corriander leaves
- 120 grams Cashews
- 1 red capsicum, quartered
- 10 grams fresh lemon juice
- 100 grams Semi sundried tomato
- 30 grams EVOO (extra virgin olive oil), or use oil the tomatoes come in

Yum, yum, yum. I only had green capsicums in the garden so used them, still turned out great. Tastes amazing in a burger or sandwich too
This is amazing! We used mix of almonds and sunflower kernels (needed to be used up) and parsley in place of coriander. Even the picky ASD kiddos loved it 😀
Very, very tasty. I ussd 2 red chillis & 2 garlic. Will make it again. So fresh. Love it.
I found the dip very bland, dont get me wrong there was flavours but didn’t interconnect together well. Would not make this again...

I’ve made this a couple of times now. It’s a favourite amongst family and friends. We enjoy chilli with seeds and find good quality sun dried tomatoes are important in achieving great results. Thanks for a top recipe!
