Mint and Coriander Raita

  • 1 cucumber, lebanese
  • 2 tsp salt fine
  • 1 tsp cumin, ground
  • 15 grams mint leaves, fresh
  • 30 grams coriander leaves, fresh
  • 1 clove garlic
  • 2 piece fresh green chilli
  • 500 grams Greek plain yoghurt
  • 1 tbsp lemon juice

Recipe's preparation

    Mint and Coriander Raita
  1. Chop cucumber into quarters lengthwise, de-seed and sprinkle with salt then place on paper towel for 15 - 30 minutes to absorb excess moisture. Rinse then Pat dry.
  2. Place cucumber, cumin, mint, coriander, garlic and chilli into mixing bowl and chop 6 sec/speed 6.
  3. Add lemon juice and yoghurt and mix for 10 sec/speed 6.
  4. Place into serving dish and server as a dip for poppadoms, naan bread or curry puffs or as a side dish with curries.

    Raita is great, helps the bowel movement. And cucumber has fresh flavor which embellish the recipe!

    If I could give 10 stars then I would! I made this for family and friends on the weekend and they all couldn't get enough! I served it with the Authentic Butter Chicken, Pappadums, Naan and Saffron Rice.

    Made this last night for a dinner party of 6 to go with samosa, just letting you know it was delicious but I only used half quantities with mint and coriander to the 500g of yoghurt and we had plenty and it was still quite strong but not over powering.

    Chilli is listed in the method but not in the ingredient list. I hope it still tastes good....In the fridge now to develop the flavours.

    Loved this! The only thing I did different was roughly sliced an onion and added some finely (or sliced) chopped tomato. The onion really adds nice flavour tmrc_emoticons.) And although you mentioned the chilli in the method, it wasn't listed in the ingredients (I had one on hand anyway!)A great recipe and simple for new Thermo users too!
