Ingredients

Sweet Potato & Lentil Soup

  • 30 grams butter or oil
  • 125 grams onion, peeled
  • 2 cloves garlic
  • 40 grams Celery
  • 125 grams carrot
  • 250 grams sweet potato, peeled
  • 75 grams red lentils, (dried or tinned)
  • 1 bay leaf, (dried or fresh)
  • 800 grams water
  • 2 tbsp TM Vegetable stock paste

Recipe's preparation

    Sweet Potato & Lentil Soup
  1. Add onion, garlic, celery, carrot into TM bowl – chop 5 secs/Speed 6


    Scrap down sides and add in oil/butter.


    Cook for 6 mins/100’C/Speed 1 with MC out of lid.


    Add sweet potato – chop 5 secs/Speed 6


    Add, lentils bay leaf, water and stock.


    Cook 15mins/100’C/Speed 2


    *Remove bay leaf*


    Puree soup 45 secs/Speed 9 (slowly turning dial from speed 1 to speed 9)

    Really tasty, healthy and filling soup. Added more spices to it as like a lot of flavour. Will make this again.

    Super easy & super yummy as is. I did cheat & used Campbell's stock instead of vegetable stock paste (I hadn't made any) & obviously no water. Just season with salt & pepper at the end.

    Great recipe, thanks. I only added in half of the lentils (dried) as im not a huge fan of red lentils, and i didn't have celery so i added some cauliflowerini i had in the fridge. I also added some salt and pepper for seasoning before blending. It was very tasty, netx time i think i might experiment with different spices.

    Just made this, had no celery, added extra carrot, some cumin & ginger as per comments - it tastes creamy & delicious, looking forward to enjoying later with some home made fresh bread rolls

    Yum! I swapped for regular potato as I had no sweet potato. Also added a little rosemary and cumin. Less stock paste and no celery. Thanks for the great recipe!

    Lovely, easy, tasty soup. Also reduced the stock to 1tbsp and find this is sufficient. Great with a dollop of sour cream.

    Delish. Only went a tablespoon of veg stock as recommended by others and it was definitely salty enough. My two
    little boys loved it too. Will one on the rotation now.
