      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Method
  1. Pre heat oven to 180 degrees
  2. Prepare 2 baking trays with baking paper and leave to the side until later
  3. Add icing sugar, flour & corn flour to the bowl. Mix 10 seconds/speed 5.
  4. Empty mixed ingredients into seperate bowl to add to creamed butter later.
  5. Place butter into mixing bowl and mix 20 sec/speed 4. Scrape down sides of mixing bowl with spatula, then repeat mixing 30 sec/speed 4.
  6. Scrape down sides of mixing bowl with spatula, then mix 30 sec/speed 4. Scrape down sides of mixing bowl, then repeat mixing 30 sec/speed 4 or until light and soft.
  7. Add 1/3 of reserved icing sugar, cornflour and flour, then mix 20 sec/speed 3.5or until just combined.
  8. Add another 1/3 of reserved icing sugar, cornflour and flour, then mix 20 sec/speed 3.5 or until just combined.
  9. Add remaining 1/3 icing sugar, cornflour and flour, then mix or until just combined.
  10. Devide mix into 2 halves roll 2 balls into desired gurth logs.
  11. Slice shortbread to desired thickenss
  12. Transfer shortbread onto prepared baking trays, leaving a 2 cm gap between each finger, then prick each finger with a fork. Bake for 15-18 min (150°C), until firm but not browned, then allow to cool on baking trays[/size]
