Feijoa, ginger and Chilli jam

  • 1000 gram feijoa (skins on), washed, topped and tailed and roughly chopped
  • 1 lemon, washed, quartered and deseeded
  • 5 centimetres fresh ginger, roughly chopped
  • 1 chilli, fresh, deseeded if preferred
  • 500 grams raw sugar, can use white if prefered

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Jam
  1. place the lemon, chilli and ginger into the bowl
  2. Chop 5 seconds speed 5
  3. scrape down and add feijoas, sugar and water
  4. Replace MC with simmering basket and cook 30 mins, Varoma® sp2
  5. place into sterlised jars and seal

Tip

To test if Jam is cooked, drop a little into a small bowl with cold water, the jam shouldn't run but stay as a together.

    Thanks for the inspirational recipe.

    I used crystallised ginger and apple cider vinegar instead of water. I cooked it for an extra 30 minutes and made more of a delicious paste
