Tamarillo chutney

  • 750 g tamarillos, Peeled (see tips)
  • 1 onion, Peeled and quartered
  • 2 cloves garlic, Peeled
  • 1 long red chilli, De-seeded
  • 1 tbsp olive oil
  • 350 g sugar, of choice
  • 250 g red wine vinegar
  • 150 g sultanas
  • 1 tsp ground cinnamon
  • 1 tsp ground allspice

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    To Make:
  1. Place garlic and chilli in the bowl and chop for 3 secons / speed 6 (scrape bowl if necessary and repeet)
  2. Add onion and chop 3 secons / speed 4
  3. Add olive oil and cook 3m / 100°c / Reverse speed 2 Counter-clockwise operation
  4. Add remaining ingredients, place steamer basket on top of lid and cook 40 min / 100°c / Reverse speed 1 Counter-clockwise operation
  5. Check consistancy, chop in 2 sec incriments on speed 4 for less chunky, and if too runny, cook further in 5min incriments / 100°c / Reverse speed 1 Counter-clockwise operation
  6. Hot pack into sterilized jard and waterbath can for 10 min. this will give long shelf life.

Tip

To prep the tamarillos, heat a pot of water to boiling then turn off. Cut an "x" with a sharp knife at the tip of each tamarillo approx 1cm long for each of the 4 arms that make up the "x". Carfully immerse the tamarillos in the hot water for approx 5 min, then remove. This will make peeling the tamarillos much easier, just grab esch section starting at the cut "x" and peel down. Discard skins and any stems.
