  • 200 grams apple
  • 30 grams coconut oil

Rusks

  • 200 grams apple puree
  • 200 grams spelt flour, can use part wholemeal

Recipe's preparation

    Apple Puree
  1. Roughly chop apples and chop on speed 7 until completely chopped.

    Can use any amount of apples, miminum 200g up to the capacity of the bowl. (chop, add more apples and chop until the bowl is full).

  2. Add coconut oil and cook for 20 minutes, Varoma, speed 2.

  3. Once cooked puree on speed 9, slowly turning dial up to 9 and puree for 1 minute.

  4. Rusks
  5. Weigh in equal parts puree and flour. Mix on speed 5 until combined.

    Add either puree if too dry or flour if too sticky to make a dough. (the dough will form a ball in the bowl when you reach a good consistancy.)

  6. Mix on Dough mode"Dough mode" Closed lid"Closed lid" for 1 minute.

  7. Remove dough onto lightly floured thermomat and press out with fingers to roughly 1 cm thick and cut with spatula into rusk fingers.

  8. Place on a baking paper lined tray in a 140 degree preheated oven and cook until firm to touch. They will still have some give on the inside and will continue to harden whilst cooling.

     

Tip

You can use any type of puree you like. I use apple because it's gentle on little tummies and digests well with spelt.

    Love these, ive made them a few times now and my 8 month old loves them! I keep them in the freezer and take one out as needed and its perfect for his teething

    I used a mix of organic spelt flour, almond meal and buckwheat flour. I found they took a little longer to cook than the recipe says and that the browner they are the harder they will be. I also found I need more flour than the recipe indicates. They store so well in the freezer and my 8 month old loves them!

    Rusks are a hit for my 8m old and 3.5y boys. I used 2 carrots (125g) and 390g Apple, 60g coconut oil & 225g spelt flour.

     I rolled and cut into fingers for baby and used cookie cutters and made dinosaurs and helicopters for my older child.  Cooked for 26 mins. 

    I find they are more of a biscuit than a rusk.

    I couldn't get them to harden after more than 30 mins in the oven. Also only managed to make 11! Have frozen them for when bulbs is a little better with solids...if I don't eat them first!

    Great recipe. I had to play around with measurements etc because I didnt re weigh the purée after putting 200 grams of apples in at the start plus I ended up running out of apple so through a banana in too. They ended up absolutely perfect and my 7mo just loves them. And now I have made them once and understand the measurements, it'll be a breeze next time. Thank you

    So far the best rusks I made. Thank you for sharing. Saying that, I did have to change the amounts of all to make it work and I did not use Varoma heating as well. I used 200g apples, 30g coconut oil, 90 degrees, 15min. Then chopping and weight 217g pureed. I had to use over 200g spelt flour to get the right consistancy, made them into little fingers and in the oven 140 degrees for about 20min, depens on your oven. They turned out beautifully!
