  • 140g brown rice
  • 1 large brown onion, peeled and halved
  • 50g olive oil
  • 280-300g chicken thigh, cut into 1-2cm pieces
  • 320g pumpkin, roughly chopped
  • 400g water
  • 4 fresh apricots, destoned and roughly chopped

Recipe's preparation

  1. 1. Place rice into TM bowl and mill for 15 seconds/speed 10.

    Set aside. (If you have an older baby, don't mill as much)

     

    2. Place onion into TM bowl and chop for 5 seconds/speed 5. Scrape down bowl.

     

    3. Add olive oil and saute for 3 minutes/100 degrees/speed 1 MC off.

     

    4. Add chicken and pumpkin to TM bowl and saute for 5 minutes/100 degrees/speed 1, MC off.

     

    5. Add ground rice, water and apricots and cook for 15 minutes/100 degrees/speed 1.

     

    6. Blend for 10 seconds/speed 8.

Tip

Many recipes for apricot chicken contain french onion soup (which often has a lot of salt) and apricot nector (which contains added sugar). This is a more pure recipe, suitable for babies.

 

This makes a large portion so you can freeze the rest in small portions in Glad Freezer Bags or similar.

    Thanks for this healthy apricot chicken recipe! I was a bit worried it wouldn't taste like apricot with all the pumpkin that's in there but the flavour comes through well. My 10 month old has gobbled it up, with a few sneaky spoonfuls for me too! It has also frozen well  tmrc_emoticons.)
