Recipe's preparation

  1. Mill rice for 3 seconds on speed 8. Set aside.

  2. Put chicken breast in the bowl with 3/4 MC of water (or reduced salt chicken stock) and cook for 5 minutes on 100 degrees at speed 1.

  3. Blitz chicken for 20 seconds on speed 9 - more or less depending on how your child likes texture. My baby does not like chicken bits so I blitz it until it is almost powdery.

  4. Add cauliflower and blitz it for 10 seconds on speed 6 to small little pieces. You can do it for longer or shorter depending on how chunky your child likes their food.

  5. Add rice and 250 to 300g of salt reduced chicken stock or water and cook at 100 degrees on reverse Counter-clockwise operation"Counter-clockwise operation" at speed 3 for 17 minutes.

  6. Puree to desired consistency.

Tip

Could use Arborio rice and make a risotto as well. You will need to lengthen the time taken to cook the rice.

    This was a massive win with my 9 month old.
    I didn’t mill my rice in step 1. I threw the rice in during step 3 when blitzing the chicken. It kept the rice more chunky. The congee freezes really well and loosens up with water.

    This was very much what I was looking for in a recipe. I added zucchini instead of cauliflower, as this is what I had at home, and I was more concerned with the proportions of chicken to stock to rice. It is a little bit cluggy, but reheats well with a drop of water. It also made quite a bit, which I froze in portions. Thanks

    May need to add more water or blitz the rice a bit less. I find that congee loosens up really well with a bit of hot water.

    Did this turn out claggy for anyone else? My 12 month old spat it out as soon as it touched her tongue and she's normally not fussy.

    Would recommend using chicken thigh or darker chicken meat for the higher iron content  tmrc_emoticons.)
