Ingredients

MEDITERRANEAN SCROLLS

  • 50g cheese, feta
  • 100g Cheddar cheese, or your preference
  • 50g Mozzarella Cheese
  • 100g spinach
  • 100g semi sun dried tomato
  • 6 black olives, (optional)
  • 100g Pesto
  • 300g water
  • 2 tsp dried instant yeast
  • 20g olive oil
  • 1sp salt
  • 500-520g Baker's Flour

Recipe's preparation

  1. 1. Line a large baking tray with baking paper and set aside

    2. Place cheddar and mozzarella cheese into mixing bowl and grate 5 sec/speed 8. Transfer into a bowl and set aside

    3. Place spinich into mixing bowl and chop 3 sec/speed 6. Transfer into cheese bowl

    4. Place water, yeast, oil and salt and warm 2 min/37 degrees/speed 1

    5. Add flour and combine 5 sec/speed 5, then knead 1 min Dough mode"Dough mode"

    6. Transfer dough onto silicone bread mat or floured work surface and work into a ball. Wrap in silicone bread mat, or place into a glass bowl and cover with a kitchen towel. Leave to prove in a warm place until doubled in size (approx 30 mins)

    7. Knock down dough, then roll into a large rectangle. Spread pesto over dough, sprinkle all cheeses, spinich and add semi sun dried tomatoes and pull olives apart and scatter all over. Roll up along longer edge, into a long Swiss roll, use sharp knife, cut into approx 12-15 slices to form individual scrolls and place cut side up onto prepared baking tray

    8. Place into a cold oven and bake for 25-30 mins at 200 degrees

    9. Serve warm or allow to cool (approx 1 hour) before transferring into a sealable container to store until use

Before knocking down dough, add a little oil on thermomat to make it easier to roll into swiss roll.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
