Ingredients

  • 2 Carrots medium, in Chunks
  • 120 grams almonds, raw
  • 2 apples, peeled, and quartered (core removed)
  • 85 grams medjool dates
  • 120 grams Spelt Flour White
  • 85 grams rolled oats
  • 5 grams chia seeds
  • 20 grams Vanilla Pea Protein Powder
  • 65 grams Coconut sugar/raw sugar
  • 1 egg
  • 3/4 tablespoon Baking Powder, gluten free
  • 1 can Ayam coconut milk

Recipe's preparation

    Method
  1. 1. Add almonds to bowl and mill for 10 sec/Sp 9

    2. Add carrots, apples & dates and blend for 15 Sec/sp 8

    3. All all remaining ingredients and mix for 10 sec/sp 6

    4. Use a tablespoon to add amounts of mixture into a pan on medium heat and cook in a small amount of coconut oil to aviod sticking. Flip once base of pancake starts to brown around the edges.

Tip

Serve with raw honey or another topping, or simply enjoy on their own.

I like to freeze these and treat them as a "grab and go" breakfast option for work.

    These are yammi! Even my very fussy 3yr old agreed. And I can sneak some fruit&veg in tmrc_emoticons.;-) . I didnt put the protein powder, instead added some cinnamon and vanilla powder.  thanks for the recipe.

    These Are yum! My 3yo loved them and v healthy. I made these again and this time I fought the urge to add extra eggs although with 50/50% coconut and rice flour and 250-300ml coconut milk and 15 g coconut sugar it was quite dry but with some coconut oil in the pan on v low heat they still came up well.  Have a propensity to burn so watching closely is best. I skipped the protein powder. Covered while cooking. Will be good for picnics and will freeze too as makes a large batch And are filling.  Makes 10+.
