Ingredients

Banana Bread Donuts

  • 65 grams unsalted butter, plus extra for greasing
  • 175 grams bananas, (approx 2 bananas) roughly chopped
  • 75 grams caster sugar, (or mill down raw sugar)
  • 1 egg
  • 110 grams plain flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon bicarbonate of soda
  • 50 grams full cream milk
  • 1 teaspoon vanilla extract, (or vanilla essence)
  • 1 pinch salt

Recipe's preparation

    Method
  1. Preheat oven to 200 deg. Grease a 12 hole donut tray and set aside.
  2. Place bananas into mixing bowl and mash 5 sec/speed 5.
  3. Add unsalted butter and caster sugar and mix 15 sec/speed 4. Scrape down sides of mixing bowl with spatula.
  4. Add egg and mix 10 sec/speed 4.
  5. Add plain flour, baking powder, bicarbonate of soda, milk, vanilla extract and salt. Combine 20 sec/speed 4.
  6. Scrape down sides of mixing bowl with spatula and mix 5 sec/speed 4.
  7. Fill prepared donut moulds halfway with mixture, then bake for 20-25 minutes (200°C). Allow to cool in tin for 5 minutes. Serve warm.

Tip

Use very ripe / older bananas.

If using raw sugar, you can mill down to caster sugar before step 2 then add in bananas.

Best served warm from the oven on the day they are made. Can be stored in a sealable container for 1 day.

Dust with icing sugar if desired for presentation.
