Ingredients

Base Muffins

  • 354 grams cake flour, low protein flour (see tips)
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon bicarbonate of soda
  • 180 grams caster sugar
  • 1/4 teaspoon salt
  • 2 eggs
  • 240 grams buttermilk
  • 120 grams oil, be sure to use a flavourless oil like vegetable oil
  • 1 dash vanilla extract, optional

Recipe's preparation

    Base Muffins
  1. Preheat oven to 180°C Line 6 holes of a muffin tray with muffin or cupcake liners and set aside
  2. Place flour, baking powder, bicarbonate of soda, caster sugar, and salt into a mixing bowl, then mix 5 sec/speed 5.
  3. Add eggs, milk, oil and vanilla extract (optional) then mix 10 sec/speed 4. (Add flavours of choice here)
  4. Divide the mixture between prepared muffin trays. Bake for 20-25 minutes (180°C) or until a wooden skewer inserted into the center of the muffins comes out clean. Place on a wire rack to cool completely before serving.

Tip

Cake flour is essentially low protein flour that has a lower ability of forming extensive gluten networks, making cakes lighter and fluffier.

In terms of where you can find it I use "Lighthouse biscuit pastry & cake low protein plain flour" that I find in Coles, Woolworths and IGA supermarkets. you could also purchase low protein flour online

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
