Ingredients

Cupcakes

  • 120 g self-raising flour
  • 20 g cocoa powder
  • 150 g Butter, chopped and softened
  • 150 g eggs (approx. 3 large eggs)
  • 150 g raw sugar

Chocolate glaze

  • 220 g double cream
  • 220 g callebaut 811 NV, 54% dark chocolate, small pieces or callets

Decoration

  • 220 g callebaut 811 NV, 54% dark chocolate, small pieces or callets
  • 36 mini chocolate eggs

Recipe's preparation

    Cupcakes
  1. Preheat oven to 180°C.

  2. Line a 12 cake muffin pan with paper cases.

  3. Place cupcake ingredients in order listed into mixing bowl and mix 30 sec/speed 5.

  4. Scrape down the sides of the bowl with the spatula and repeat mixing.

  5. Pipe or spoon mixture into paper cases until each case is three-quarters full.

  6. Bake for 13-15 minutes. Remove from oven and allow to cool before decorating.

  7. Chocolate glaze
  8. Place cream and chocolate into a clean and dry mixing bowl and heat 4 mins/37°C/speed 2.

  9. Scrape down the sides and stir without heat at speed 2 to melt the remaining bits of chocolate until the mixture is completely smooth.

  10. Pour half the chocolate glaze into a small bowl and place into the refrigerator to cool for 20 minutes. Retain the remaining glaze in the bowl.

  11. Assembly
  12. Cut the top off each cooled cupcake at an angle. Reserve the tops for step 13.

  13. To make the icing, insert butterfly into the mixing bowl containing the reserved chocolate glaze and whip 1 min/speed 3.

  14. Pipe icing onto each cupcake using a star-shaped nozzle.

  15. Place reserved cupcake tops on top of the icing on each cupcake. Then carefully tip each cupcake upside down, dipping the cupcake tops in the reserved refrigerated liquid chocolate glaze to give them a shiny even coating. Then, clean and dry mixing bowl and proceed to make the nests and decorate the cupcakes in the next 4 steps.

  16. Decoration
  17. Place chocolate into a clean and dry mixing bowl and heat 3 mins/37°C/speed 2.

  18. Scrape down the sides and stir without heat at speed 2 to melt the remaining bits of chocolate until the chocolate mixture is completely smooth.

  19. For the nest decoration, place melted dark chocolate into a paper piping cone and pipe a fine lattice of lines onto a frozen granite tile or very cold baking tray – about 20cm x 10cm.

  20. Lift the chocolate lattice immediately with a palette knife, then concertina the lattice together and shape while still flexible to form 12 nests.

  21. Place the chocolate nests immediately on each chocolate cupcake, so that they stick to chocolate glaze as it sets.

  22. Finish the decoration by placing three mini chocolate eggs into each chocolate nest.

The decoration is very impressive, but these can be decorated however you like with chocolate ganache, easter eggs or sprinkles. Get creative!

    Great recipe. Thanks. Do you think there would be room in the bowl to double the cupcake recipe?? I don't think 12 cupcakes are going to last long at our house.

    Really easy to follow and make recipe. Using simple ingrediners found in almost anybpantry I'm sure.

    i only used the cupcake base component in this recipe but it was delicious with my standard chocolate frosting tmrc_emoticons.)

    Made 24 of these Choc cupcakes this morning for my son to take to school for his birthday...super easy and very tasty. Then made another batch of mixture to make a birthday cake for tonight. Had a taste test from some off cuts once cooked...very tasty  tmrc_emoticons.) This will now be my go too for any chocolate cake/cupcakes. Thankyou!
