- 130 grams quinoa
- 150 grams quinoa flour
- 100 grams coconut oil
- 200 grams raw sugar
- 1 egg
- 1 teaspoon vanilla essence
- 1 tablespoon cornflour
- 1 teaspoon cinnamon
- 1/2 teaspoon bicarb soda
- 1/2 teaspoon salt
- 1 handfull of choc chips or dried fruit or nuts, (optional)
- 2 tablespoons cacoa power or cocoa, (optional)

1. Rinse quinoa with lukewarm water for at least 1 minute.
2. Place 600ml water into TM jug and insert TM basket containing rinsed quinoa.
3. Par-cook quinoa 14 minutes/100 degrees/speed 3. Once cooked remove TM basket using spatula. Set quinoa into fridge to cool. Discard water from TM bowl (no need to wash the jug yet).
1. Pre-heat oven 180 degrees. Line baking trays with baking paper.
2. Weigh coconut oil into TM jug. Melt 1 minute/50 degrees/speed 1.
3. Add sugar, egg and vanilla. Mix 30 seconds/speed 5.
4. Add quinoa flour, cornflour, cinnamon, bicarb soda, salt (and optional cacoa/cocoa powder). Mix 30 seconds/speed 5.
5. Add par-cooked quinoa (and optional choc chips, dried fruit and/or nuts). Mix 30 seconds/"Counter-clockwise operation" / speed 3
6. Spoon cookie mixture onto lined baking trays, leaving room for cookies to expand. With wet fingers pat cookie dough to flatten if desired.
7. Bake 12-15 minutes. Cool for a few minutes on tray then transfer onto cooling rack.

Tip
To make your own quinoa flour: Dry roast quinoa until slightly golden and fragrant, 12-15 minutes/Varoma/speed 1. Cool completely before milling into flour 1-2 minutes/speed 9.
Great flavour combinations include: Double choc- cacoa powder and choc chips. Cranberries and walnuts.

My mixture was dry and biscuits crumbly, nothing like the picture.
Unsure why.....although the taste was good.
These were really good. I used raisins instead of choc chips. Yummy.
As a healthier alternative to chocolate cookies these were a huge hit in our house. Made slight alterations to the recipe as I didn't have enough quinoa so for the flour I substituted with an almond and buckwheat mix. Also went the cacoa option and they turned out scumptious! Definitely will be making these again! Thank you
