Ingredients

Dough

  • 2 sachets dry yeast, (or 20g fresh yeast)
  • 250 g Milk, or non-dairy substitute
  • 1 pinch salt
  • 500 g bakers flour
  • 60 g caster sugar
  • 70 g Butter, or nuttelex
  • 1 egg

Paste for Crosses

  • 80 g plain flour
  • 100 g water
  • 1 pinch salt
  • 1 teaspoon canola or sunflower oil

Glaze

  • 2 tbsp water
  • 2 tbsp sugar

Recipe's preparation

    Dough
  1. Add yeast and milk to bowl and heat 3 minutes/37 degrees/speed.

  2. Add all the remaining ingredients and mix 6 seconds/speed 7.

  3. Scrape down sides of bowl with spatula and knead 2-3 minutes on interval setting.

  4. Preheat oven to 200C

  5. Set dough mix aside in Thermo server, or a bowl covered with plastic wrap or a clean cloth. Stand in a warm place until dough doubles in size (around 1 hour).

  6. Divide and shape into dinner roll size buns. Place them 1-2cm apart on a greased baking tray, cover and let prove a further 10-15 mins.

  7. Paste for crosses
  8. Place all paste ingredients into TM bowl and mix 30sec/sp4.

  9. Pour into piping bag and pipe crosses onto buns.

  10. Bake buns for about 10-15mins or until golden brown.

  11. Glaze
  12. Place water and sugar into TM Bowl and cook 2mins/100deg/sp4.

  13. Brush buns with hot sugar syrup while still warm.
