Dough
- 360 grams water
- 2 teaspoon dried instant yeast
- 60 grams sugar
- 600 grams Baker's Flour
- 2 teaspoons bread improver
- 2 teaspoons ground cinnamon
- 2 teaspoons ground nutmeg
- 30 grams olive oil
- 2 teaspoons salt
- 150 grams sultanas, or a mix of other dried fruit and peel
Piping mixture
- 80 grams plain flour
- 1 pinch salt
- 100 grams water
- 5 g oil
glaze
- 2 tablespoons Boiling water
- 2 tablespoons sugar

- Add water, yeast and 60g sugar to bowl. Warm 2 minutes, 37 degrees, speed 2.
- Add bakers flour, bread improver, cinnamon, nutmeg, olive oil and salt. "Dough mode" Knead for 4 minutes.
- Add sultanas (or mixed fruit). "Dough mode" Knead for 2 minutes
- Lightly flour dough mat and tip dough out of bowl onto mat. Gently knead if required to ensure even fruit distribution.
- Divide dough into 12 even amounts and roll into balls. ~80g each ball
- Place onto a lined tray, fairly close together, but not touching.
- Cover and allow to rest for 20 minutes. Meanwhile, preheat oven to 200C and prepare piping mixture.
- Add flour, oil, water and pinch of salt to bowl and combine 30 seconds speed 4. Place into piping bag fitted with a small nozzle.
- Once buns have rested for 20 minutes and oven is preheated, pipe the cross on top and bake for 15-18 minutes.
- Combine boiling water and sugar in a bowl and stir to dissolve. As soon as hot cross buns come out of the oven, brush the glaze over top with a pastry brush. Allow to sit for 5 minutes and then transfer to a cooling rack.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -
