Keto Fudge Brownies
- 140 grams olive oil, or 200g of butter
- 150 grams sweetener, Most UK Stores sell Sugarly
- 3 portions large eggs or 4 medium eggs, 180g of beaten eggs
- 90 grams Almond Flour, ground almond
- 15 grams vanilla extract, Optional
- 50 grams cocoa powder
- 3 grams salt
- 200 grams dark chocolate chips / cacao nibs
- 5 grams baking powder
- 25 grams Nuts, Optional
- 10 grams espresso powder, Optional
- 25 grams additional oil

- Preheat oven to 180°C/Gas Mark 4.
- Lightly grease a brownie tray/baking pan. Set aside
- Add nuts to bowl, if using.
- Chop for 15 sec/speed 5 until nuts are chopped into small pieces. Remove, and set aside
- Add 200g of butter into mixing bowl, if using butter
- Add 140 grams of oilive oil into mixing bowl, if using olive oil
- Add 10 grams esspresso powder into mixing bowl.
- Heat for 3 min/50°C/Speed 1
- Add sweetener into mixing bowl.
- Add additional oil into mixing bowl
- Mix for 20 sec/speed 5
- Add eggs
- Add 15 grams of vanilla into mixing bowl
- Mix for 30 sec/speed 4
- Add 90g almond flour into mixing bowl
- Add 50g cocoa powder into mixing bowl
- Add 3 grams salt into mixing bowl
- Add 5 grams baking powder into mixing bowl
- Mix for 10 sec/speed 4
- Add chocolate chips into mixing bowl
- Add nuts into mixing bowl, if using
- Mix for 10 sec/"Counter-clockwise operation" /speed "Gentle stir setting"
- Pour batter into prepared pan and make the mixture, smooth
- Bake 20-25 minutes (180°C/Gas Mark 4), or until just set. Insert skewer, into brownie to see if the middle bit is cooked.
- Let cool 10 minutes in pan before lifting out the brownies.
Tip
Bake brownies until just set. They continue to cook for a little while when removed from the oven
Add nuts like pecans/macadamia nuts when adding chocolate chips
