Dough
- 60 gram flaxseeds
- 75 gram Pitted Dried Dates
- 50 gram raw sugar
- 70 gram Butter
- 30 gram coconut oil
- 1 teaspoon Vanilla Bean Paste
- 220 gram SR flour
- 1 --- egg
- 50 gram Milo
- 30 gram Milk

1. Pre-heat oven to 180ºC.
2. Blitz flaxseeds 20 seconds, speed 9. Set aside.
3. Blitz dates 20 seconds, speed 9. Set aside.
4. Blitz raw sugar 4 seconds, speed 10. Add dates, butter and coconut oil and cream together for 30 seconds, speed 5.
5. Add remaining ingredients and mix 10 seconds, speed 6. You may need an extra dash of milk if you feel the mixture is too dry. It makes a soft dough that easily rolls into balls and is not sticky (I.e. doesn't stick all over your hands).
6. Close lid, "Closed lid" , interval, "Dough mode" , for 20 seconds.
7. Roll teaspoon sized balls, place on lined baking tray and gently press down with a fork.
8. Bake 12-15 minutes or until desired crunch (this is a softer biscuit, not a really crunchy one!).
Tip
This recipe is adapted from an original 'milo and flaxseed cookie', but I don't recall where I got the original recipe from. I added dates simply to lower the added sugar, and in this instance I substituted some of the butter with coconut oil purely as I had run out of butter! You could use all butter, or all coconut oil if you'd prefer (I would try with only 80g coconut oil first though or the dough might be too wet).
