Ingredients

Rock Cakes

  • 170 grams SR flour
  • 1 teaspoon mixed spice
  • 1 egg
  • 1 pinch salt
  • 1 teaspoon vanilla
  • 30 grams caster sugar, + extra for baking
  • 50 grams Mixed fruit
  • 50 grams Milk, Adjust for consistency
  • 30 grams Butter, room Temperature

Recipe's preparation

  1. Place flour, salt, spice and butter into bowl for 10 Seconds at speed 4, or until butter and flour are mixed to a coarse consistency.
  2. Lightly beat egg with vanilla.
    Add to bowl, along with all remaining ingredients.
    10 Seconds Speed 4 Counter-clockwise operation"Counter-clockwise operation" or until mixed.
  3. Place spoonfuls on a lined baking tray and dust with small amount of sugar.
  4. Place in oven for 10 - 15 minutes at 230 Degrees.
  5. Allow to cool on wire rack.

Tip

Spice can be omited if desired.

    These were so easy to make and very delicious! I loved the spice taste - I added All Spice and I just used sultanas - I think I added a bit more than suggested. Thank -you, great for morning teas.

    I like this recipe the best out of 3 I tried.  I took mignonej's advice and reduced the temp to 200 and doubled the fruit. I used sultanas only.  I omitted the sprinkling of sugar before baking as I thought it might be too sweet, but I think it would have been ok.  This recipe produced the lightest and yummiest cakes of all so far.

    Taste lovely but i need to lower the oven temperature to about 180-200 degrees and double the fruit. Thanks for posting.

    Just made these and YUMMM! Highly recommended! They are not going to last long in my house with Miss 5 and Mr 3!  I did however, exchange the mixed fruit to straight sultanas.
