Ingredients

Quinoa Biscuits

  • 180 grams brown rice
  • 130 grams peanuts, (unsalted & roasted is best)
  • 100 grams Rice malt syrup
  • 50 grams Maple syrup
  • 40 grams Coconut, desiccated or shredded
  • 80 grams extra virgin olive oil, or oil of your choice
  • 1 level tbsp Psyllium husk
  • 50 grams Quinoa flakes
  • 50 grams raisins
  • 20 grams sesame seeds

Recipe's preparation

  1. Pre-heat oven to 180 degrees (or 190 degrees if your oven is slow like mine!)
  2. Add brown rice into bowl and grind to flour. 1 min, Sp10. (I add a piece of paper towel under the lid at this step so small parts don't end up on top of the lid). Set aside in a bowl.
  3. Add peanuts and grind for 10 secs, Sp8
  4. Then continue to make a paste by blending for 30sec, Sp4
  5. Add rice malt, maple syrup, coconut & oil and
    blend 20 sec, Sp4
  6. Scrape the bowl and around the blade to ensure 'wet' ingredients are blended
  7. Add reserved brown rice flour, psyllium husk, quinoa flakes, raisins and sesame seeds
    and mix 15 sec, REV, Sp3
  8. Again, stir and scrape around the bottom of the bowl and finish mixing
    with another 5 sec, REV, Sp3
  9. With wet hands, take a small amount and squeeze together to bind then squash down slightly with your palm before placing on baking tray. Should make about 30 biscuits.
  10. Cook for approx 20 mins or until golden brown.
  11. Leave on tray to cool (& cook further) so they become crispy.

    Enjoy these Gluten Free, Dairy Free and refined sugar free treats.

Tip

If you already have peanut butter in your cupboard you can always just use that and skip steps 3 & 4 above, but nothing like making your own with your trusty TM

    Nice biscuits although I did vary the recipe a bit to use up what we had in the pantry. 15 minutes at 180 degrees was long enough in our oven. I'll make again soon. Thanks for the recipe.
