Too Easy Gluten Free Dairy Free Chocolate Cake
- 120 g Nuttlex
- 2 Eggs, room temperature
- 100 g Milk, (I used Inner Goodness Coconut Drinking Milk)
- 1 tsp vanilla essence
- 120 g sugar
- 120 g Gluten free plain flour, (I used Aldi's)
- 1 tsp Gluten Free Baking Powder
- 30 g cocoa
- 1/2 tsp Bi-carb soda
Icing
- 3 tbsp cocoa powder
- 50 grams Nuttlex
- 220 grams icing sugar
- 1/2 tsp vanilla essence
- 2 tbsp Boiling water

- Pre heat oven to 180 degrees C. Grease a small ring tin.
Add Nuttlex to "Closed lid" and melt for 90 secs at 60 degrees, speed 4.
Add remaining ingredients and mix for 20 seconds, speed 5.
Scrape down and repeat.
Pour into prepared tin and bake for around 30 - 35 minutes or until skewer inserted into cake comes out clean. - Add all ingredients except hot water to "Closed lid" .
Mix for 6 seconds/speed 6. Then add water and mix 5 seconds/speed 7 or until desired consistency.

This recipe has been adapted from the Every Day Cooking Book to be Gluten Free.
It's a lovely moist cake and is quite small, so only use a small ring tin.

Great I doubled the recipe and cooked a bit longer. The kids didn't even know it was GF and DF. First cake I've made that everyone ate it all!
Great recipe! Very quick,very easy. Simple ingredients that any GF Baker would have in the cupboard. Excellent texture,light and moist. (Like the texture of a good GF packet mix but without all the weird science lab ingredients!) Many GF cakes are heavy,dry or crumbly,so this one is a winner,and added bonus that it’s dairy free.
I made mine into 12 large muffins.

Used this for my daughter's birthday party and I doubt anyone guessed it was gluten free. I doubled the recipe to make a normal sized cake (except for eggs - accidentally used only 2), used butter instead of Nuttelex & used rice milk. Baked for 45 minutes. Light, fluffy & delicious. Not doubling eggs was an accident but I'd only use 2 if I doubled it again as it was spot on. Thank you!

Made this for my nephew who has allergies and it was really nice. Used rice milk and it worked well.
Can you use a different tin or make it into muffins? If so, how would I vary the timings?
