Ingredients

  • 200 g Butter
  • 100 g brown sugar
  • 600 g Tinned Apricot, or Peaches, Pineapple, etc
  • 250g g sugar
  • 1 teaspoon vanilla essence
  • 3 egg, free range preferable
  • 250 g Self Raising Flour

Recipe's preparation

    How to make
  1. Pre heat the oven to 170c.

    Melt 70g of butter (either in the thermomix or microwave) Then pour the melted butter into a 20cm cake tin. Sprinkle the brown sugar on top of the melt butter in the cake tin. Set aside

     

    Attach the butterfly attachment and place 130g of butter, sugar and vanilla essence in to the TM bowl. Mix together for 1 minutes on speed 5 and then scrape down the sides of the bowl. While continuting to mix on speed 5 add one egg at a time every 30 seconds.

    Next remove the butterfly.

    Now add the four and mix on speed 3 for 20 seconds. Stop and scrape down the sides of the TM bowl and mix for a further 20 seconds.

     

    Next retrieve the cake tin with the melted butter and brown sugar mix. Using whatever tinned fruit that you choose (apricot, peaches, pineapple, berries, apples, etc ,etc) and generasly place around the cake tin. Squeeze as much fruit onto the bottom of the cake tin as possible (it will taste and look much better!)

     

    Next evenly spread the cake batter over the fruit. Loosly cover the cake tin with foil (cover very lightly so that the cake can still rise! if you dont the cake can burn easily)

     

    Next place the cake tin inside the oven and bake for 40-50 minutes. Set back relax and enjoy the lovely smell that will rise from your oven. However if you want to be more proactive, take this time to wash you thermomix... and then try to sit back a relax haha!

     

    Next remove cake from oven and poke the cake in several places with a metal scewer to make sure that the cake is fully cook. If any batter comes out on the scewer your cake isnt yet cooked and cook for another 5-10 minutes and then repeat this test. 

     

    Once the cake is cook allow the cake to semi cool while still inside the cake tin. After 10 minutes get a plate and place over the cake tin. In one fluid movement, flip the cake upside (hence the name). What should be revealed should be caramelised fruit topping and a spongy cake beneath. Dont worry if the top of the cake look a little under cooked (its normal!)

    Serve warm or cold or perhap even with some icecream for those of us with a sweettooth!
