  • 350 grams Almond milk, Or preferred vegan milk of choice
  • 1 tablespoon apple cider vinegar
  • 100 grams vegan butter
  • 200 grams white sugar
  • 2 teaspoons lemon zest, grated
  • 1 teaspoon Lemon extract
  • 2 teaspoons vanilla extract
  • 350 grams plain flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Recipe's preparation

    Method
  1. 1. Preheat oven to 170 Degrees Celsius.

    2. Line a 12 hole muffin tray with muffin cases and lightly oil.

    3. Place a medium sized bowl on top of lid and weigh almond milk. Add apple cider vinegar and mix. Set aside.

    4. Insert butterfly whisk into bowl and then weigh butter and sugar. Place lid on with MC inserted and select 90 seconds/speed 4.

    5. Scrape down sides. Add lemon zest, lemon extract and vanilla extract. Place lid on with MC inserted and select 30 seconds/speed 4.

    6. Remove butterfly whisk. Scrape down sides. Place lid back on without MC. Select 30 seconds/speed 2 while slowly pouring in milk mixture.

    7. Add flour, baking powder and salt. Lid on with MC inserted then select 30 seconds/speed 3.

    8. Fill muffin liners and bake for 22-25 minutes or until the top is lightly golden. Remove from oven and allow to cool for 5 minutes before transferring onto a wire rack.

Tip

- While still hot, brush top of muffins with sugar syrup to maintain optimal freshness.

- Decorate with buttercream or any topping of choice if you wish but muffins must be completely cooled before doing so.
