Cake
- 80 g pumpkin
- 40 g zuccini
- 60 g apple
- 4 egg
- 100 g Coconut Flour
- 40 g coconut oil
- 85 g coconut cream
- 50 g Natvia
- 25g g Cacao
Icing
- 100 g coconut cream, green can
- 20 g Cacao

nto the thermomix put 250g water and the rice basket. Into the rice basket, put the pumpkin, apple and zucchini. Steam on Varoma/10 mins/Speed 1. Once cooked, remove the basket, and transfer the remaining water into a jar, this can be used for soup at another time.
Place the basket contents into the thermomix and blend for 1 min on speed 8, scraping down sides to ensure all are well mixed.
Add all dry ingredients, blend on speed 9 for 1min, scraping down the sides.
Add wet ingredients, again blend on speed 9 for 1min, scraping down the sides.
Transfer mixture to silicon muffin or cupcake trays (that fit into your Varoma) and add another 200g water and steam on Varoma for 8 mins.
Prepare your oven for 180 degrees Celcius while you wait.
Transfer the muffin tray into the oven and cook for another 15-20minutes (in my oven I use 20 minutes, in mum’s is 15)
Transfer to a cooling tray.
Once cooled, mix the coconut cream and cacao together for the icing and ice your cupcakes.
Store in fridge. They are quite dense and filling!
