Ingredients
- 300 g dried fruit - your choice-sultanas/dates/prunes/apricots/apple/pear
- 100 g almond meal - or blitz your own almonds.. for nut-free blitz oats instead of almonds (so all up you need 200g oats for nut-free)
- 100 g oats - can be blitzed a little or leave as "whole" grains
- 1 heaped teaspoon Butter
- 1 tablespoon St Dalfour Jam (nil sugar-grape juice is the sweetener)

If not done so already - blitz almonds into almond meal (or oats for nut-free version) - "turbo" bursts until fine.
Add dried fruit and set on speed 6 until they are chopped up nice and small.
Nice and small means the bar will hold together better but too small and you will get mush.
Add the oats to the bowl.
In a small separate bowl, melt butter in the microwave then add the jam and mix them. Add slowly to the tmx jug while still on speed 5 "Counter-clockwise operation"
Different fruits have different moisture content. Check the mix is going to be "sticky" enough by squeezing a small amount between your fingers. It should hold it's shape. If not, add a little more butter / jam mix. Other oils may be healthier but may not 'set' as firm as butter will.
Tip out into a "loaf tin" lined with baking paper or freezer bags. Note that slice pans are too big and cause the bars to be very thin and they will easily break. Find something (i ended up finding a good sized book and put it in a plastic bag) to squash / flatten the mix as flat and as evenly as you can. I have heard that standing on it can get a very good result!
You can then slice it, before or after refrigeration. I get 8 long ones that I then cut in half. When you slice it, use a VERY sharp knife and let the blade cut through-saw the blade back and forth, don't just push it down as the blade will just squash it's way through and leave an ugly looking cut!
Keep in the fridge until needed.
Tip
These are sweet enough with the small amount of jam and all the natural fruit sugars. Honey or Golden Syrup could also be added to help with the "sticky" factor if needed.
I have not made these in the warmer times of the year but imagine that they will not hold their shape in the warmth.. so keep in the fridge and get out just before eating or make sure a lunchbox / bag has a freezer block in it for the school journey.
The nut-free version has been trialled and works just as well.

Made these today, have only had a thermomix since Xmas and this was the easiest recipe ever! Not having to bake make this really quick. Looking forward to swapping out my bought muesli bars and replacing with these! Used honey instead of jam, worked perfectly.
This is my go to muesli bar recipe. I just use honey instead of the jam, and they work amazingly. I was cutting them up using a pizza cutter, which worked really well, but the last batch I made I just rolled into balls and they stayed together really well and were perfect to grab and go.
Have made this 4 times in the last week. It has been a big hit with both adults and kids in my family. I use coconut oil instead of butter to make it dairy free. It's so quick and easy - love, love, love it!
for a nut free version, I just did a batch where I used oats in place of the almonds.. I put 100gm of oats in first and blitzed into meal / fine.. then added 300gm mixed fruit, pulverised to the size i wanted before adding the melted butter/jam and full sized oats.
Hi there! I am DEFINITELY making these tomorrow for my kids snacks! LOVE it ! I'm going to blitz everything, remove from bowl, then melt the butter in the TMx bowl, then add everything back in. Thanks for sharing!
