Ingredients

Octopus balls

  • 100 g Octopus, cooked and cut into small pieces
  • 200 g Takoyaki powder or low-gluten flour
  • 100 g eggs
  • 450 g stock paste
  • 1 level tbsp soy sauce
  • 2 level tbsp Scallions
  • 1 level tbsp Red ginger
  • Tempura scraps
  • Takoyaki sauce
  • mayonnaise
  • Bonito Flakes
  • Aonori powder

Recipe's preparation

    Steps:
  1. Prepare the batter
    In a large bowl, mix the takoyaki powder or cake flour and egg, and gradually add the stock while stirring until a smooth batter forms. Add soy sauce and stir well.

    Heat the takoyaki mold
    Place the takoyaki mold over medium heat and apply a moderate amount of vegetable oil to each round hole to ensure it does not stick.

    Pour the batter
    Pour the batter into each hole until it is about 80% full.

    Add the fillings
    Add a piece of octopus, spring onions, red ginger, and a small amount of tempura scraps (if using) to each hole.

    Grill the takoyaki balls
    When the batter has set slightly, gently turn the balls with a bamboo skewer to form a round shape and continue grilling to ensure that all the batter turns evenly golden brown.

    Seasoning
    When the takoyaki balls are cooked through, remove them with a bamboo skewer and place them on a plate. Drizzle with takoyaki sauce and mayonnaise, and sprinkle with bonito flakes and aonori powder.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
