Ingredients
dough
- 250 grams milk.
- 2 tbsp Butter, melted
- 2 teaspoons caster sugar
- 15 grams dried instant yeast
- 450 grams bread flour
- 1/2 teaspoon salt
- 1/2 litre water, for dipping dough
topping - optional
- 2 tablespoons parmesan, grated
- 1 tablespoon salt flakes
- 2 tablespoons cinnamon sugar

Place milk into bowl and set 2 minutes, 37 degrees speed 1.
Add the butter, sugar, yeast, flour and salt.
Mix "Dough mode" speed for 5 minutes.
Place dough into a large oiled bowl and cover with a damp teatowel.
Place the bowl somewhere warm and draught free for 45 minutes to an hour. It should at least double in size.
Heat oven to 200 degrees, line 2 baking trays with paper or silicone mats. Get a bowl or dish for the 500ml of water and set on the workspace.
Place dough onto a board or baking paper and cover with teatowel to prevent drying out.
Working one at a time cut lengths of dough from the ball (this makes it easier to roll than taking balls of it. I use a pizza cutter) and roll into lengths of about 30-40cm.
Once it is evenly rolled into a length twist it into pretzel shapes and lay onto your baking tray. Repeat this step until all your pretzels are twisted.
Dip each pretzel quickly into the dish of water and lay back onto the baking tray, you can have them quite close together as these do not puff up very much.
Once you have dipped the pretzels into the water sprinkle them with your topping of choice.
Place trays into oven and bake according to taste. 15 minutes gave me a pretzel that still had a bread like texture inside, 22 minutes made them more crisp almost like a soft breadstick.

Tip
You can top these however you like, I like doing a sweeter version with a basic icing sugar glaze on top once they come out of the oven.

Mistymoo82: yeah same i love my pretzels soft when there fresh.
A+ quick n easy and enough to use on 12 large hotdogs as I was making pretzel dogs tonight. worked a treat. Will definatly make again when I have a larger crowd x Oh, I put my pretzel dogs in at 210o for 11 mins. perfect outcome.
Love them but next time ill cook for 12 minutes i like my pretzels soft when fresh.
