- 90 grams Butter, Room temperature
- 70 grams sugar
- 1 egg yolk
- 125 grams plain flour
- 1 teaspoon Finely grated lemon rind
- 60 grams pistachios
- 60 grams Cranberries
- 125 grams white chocolate melts

1. Place lemon rind in thermomix, 10 seconds, speed 8
2. Place butter, sugar and egg yolk in thermomix bowl, 1 minute, speed 6.
3. Add flour, lemon rind, pistachios and cranberries "Counter-clockwise operation" 30sec, speed 3.
4. Work the mixture into a bar, measuring 20cm x 4cm. Wrap in plastic wrap and refrigerate for 1 hour.
5. Cut bar into 5mm slices with a sharp knife, place on greased baking tray and bake for 10to 15minutes, or until golden brown.
6. Melt chocolate, grate 5-10seconds on speed 8, melt 2 minutes at50 degrees on speed 3. Once biscuits have cooled, dip half the biscuit into the melted chocolate.

What temperature would you bake these?
These are divine! I baked at 180 degrees celsius and didn't utilise the White chocolate as I didn't feel it was needed, next time I will double the recipe as they are being devoured very quickly. Thank you for sharing, these are spectacular!
