Healthy paleo snickers

  • 2 heaped tablespoons coconut oil
  • 2 medjool dates, pitted
  • 50 g raw cacao powder
  • 90 g Desiccated Coconut
  • 250 g Rice malt syrup
  • 400 g Canned Chickpeas, rinsed, drained
  • 95 g Peanut Butter
  • 2 tsp Vanilla Bean Paste
  • 225 g roasted salted peanuts
  • 40 g unsalted butter
  • 200 g dark chocolate

Recipe's preparation

  1. Grease and line a 20cm sqare pan
  2. add 1 tbsp coconut oil, melt 1min / 50°C / speed 1
  3. add dates, cacao, desiccated coconut and 1tbsp rice malt syrup
    20 sec / speed 8
  4. Spread over base of pan and firmly pack using your hands. Chill until needed. Clean and dry mixing bowl.
  5. add chickpeas, peanut butter, vanilla bean paste and 60g rice malt syrup. 20 sec / speed 6
  6. Spread over date base, smoothing surface with a spoon. Chill for 1h. Clean and dry mixing bowl
  7. add peanuts, butter and 160g rice malt syrup 2min / 40°C / speed 2
  8. cool slightly then spread over peanut butter filling, create an even surface. Freeze for 1h. Clean and dry mixing bowl
  9. break up 200g chocolate into pieces and add to mixing bowl together with 1 tbsp coconut oil.
    grate chocolate 10 sec / speed 8
    melt chocolate 2 - 5 min / 50°C / speed 3
    pour on top of slice and cover completly, chill for 1h, then cut slice into bars

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
