Ingredients

Yoghurt base

  • 100 grams Natvia or sweetener of choice
  • 100 grams milk powder
  • 6 tablespoons starter culture, either reserved from a previous batch of plain yoghurt or a store-bought natural, unsweetened yoghurt
  • 2 litres Devondale long-life milk, (full cream or lite work well)

Strawberry swirl

  • 200 grams fresh or frozen strawberries
  • 20 grams freshly squeezed lemon juice, (approx half a lemon)

Recipe's preparation

    Yoghurt
  1. 1. Place the Natvia or sugar in the TM bowl and mill 5-10sec/sp9

     

    2. Add the milk powder and culture, then pour milk up to the 2L mark (you won't use the whole 2L of milk).

     

    3. Heat at 12min/37deg/sp3

     

    4. While the milk is heating, boil the kettle then pour 3cm of water into a 2L Thermoserver and put the lid on to warm it. Get a towel ready to wrap the Thermoserver in later.

     

    5. When the milk has finished, tip out the boiled water from the Thermoserver, place it in the middle of a towel and carefully pour the milk mixture in. Put the Thermoserver lid on then wrap the towel around it.

     

    6. Leave the yoghurt mixture in the Thermoserver undisturbed for a minimum of 5 hours (overnight is great). Do not open it as the heat may escape and it won't set properly.

     

    Begin making strawberry swirl 

     

    7. Into a clean and dried TM bowl, place strawberries and lemon juice. Cook for 6-10min/90deg/sp4.

     

    8. Once finished, scrape down sides and puree 10sec/sp8. (Repeat step 8 if necessary).

     

    9. Set aside in a heat-proof bowl/jar with the lid off to cool completely in a safe place. Once the mixture reaches room temperature, put the lid on and place in the fridge to cool further.

     

    10. After 5 hours (or overnight) unwrap the Thermoserver and take the lid off to check that the yoghurt has set by gently tilting the Thermoserver - it shouldn't move.

     

    11. Place the Thermoserver in the fridge with the lid off to cool completely.

     

    12. Once both the yoghurt and strawberry swirl have cooled to fridge temperature, tip the yoghurt out of the Thermoserver into a large mixing bowl and pour the strawberry swirl on top. Run a spoon back and forward through the mixture to combine.
